EQUIPMENT TECHNOLOGY PortionControl New advances in equipment technology will help bakers stay on top of one of the most important trends in the food industry this year: portion sizes. Consumers are increasingly aware of the importance of managing the portion size of the foods they eat, according to The NPD Group, a leading market research company. The NPD’s new report, Healthy Eating Strategies by Generation, finds that (among 30 attributes) eating smaller portions ranks 11th in importance among adult consumers across generations as a healthy eating characteristic. So what does this have to do with baking equipment? Plenty. Retail bakers need help with portion control by using more advanced depositors and slicers that afford the flexibility and high efficiency they need. New technology in depositors also helps cupcakeries and other dessert shops gear up for portion control. The Mini Chip Slicer from Oliver Products offers a perfect example of such a product. According to the new portion control report from NDP, eating smaller portions ranked seventh in importance among Generation X consumers, ages 35 to 45, as a healthy eating characteristic, which is the highest rank for the behavior among all generational groups. According to the NPD food and beverage market research report, 43% of the more than 5,000 adults surveyed indicated that they ate smaller portions always or most of the time in the past year. An even greater percentage of adult consumers (57%) aspire to eat smaller portions in the coming year, suggesting that this healthy eating strategy will become more important in the future. Cupcake and dessert shops take note. This trend should lead to greater demand for cake slices, mini cupcakes and other decadent desserts that come in smaller sizes.
