It is fairly easy to define what a whole grain product has to be. At its simplest, if you put 100 pounds of wheat into the mill and you get a 100 pounds of product out you have processed the whole kernel and have ended up with a whole grain product.
Ash Content
A slightly more technical and perhaps more accurate standard for defining a whole grain product would be through its ‘ash content’. Ash content in finished flour is used to determine the bran content of the flour. Ash is measured by burning 100g of flour at a high temperature. What remains, the ash, is weighed and indicates the “ash
content” of the flour. The ash is the non-combustible minerals found the flour. Given that most of the minerals are concentrated in the bran layer one can use the ash content as an indirect measure of the amount of bran contained in the flour. If one measures the ash content of the wheat before milling and it comes in at 1.7, for example, then the whole grain flour that results will have an identical ash content of 1.7. In other word you have lost nothing in the processing.
