Kevin Collins, owner of Bakery Barn in Covington, KY, kept this in mind from the day he opened his bakery. In the production room, work tables and equipment are set up to guarantee efficiency from the back of the store to the front. “If you follow the flow of a process, you’ll be much more efficient,” Collins says. He also suggests making product in large batches, which means eliminating items like gluten-free products if the customer demand isn’t high enough. Hiring quality staff is an important key to success. “You need to have staff that you can trust to take care of customers the way you would take care of them,” Collins says. “If you have really great products and really great service, customers will keep coming back to your bakery.”

When Collins first made Butcher Block Bread, he worried about how it looked. “It actually looked kind of ugly,” Collins says. But many bakers will tell you that this style of bread doesn’t have to look perfect. “They tell me that as long as it tastes delicious, that’s what matters,” Collins says. Bakery Barn makes about 25 loaves of Butcher Block Bread for the weekends, and it usually sells out.
