example, one nutrition bar may contain
10 grams of protein from whey and eggs
while another contains the same amount
of protein from peas, nuts and hemp seeds.
The first one may make an "excellent source
of protein" claim. The plant protein-fortified
bar most likely only qualifies for a "good
source of protein" claim, and when doing
so, should not flag 10 grams of protein per
serving, as this can be misleading.
"When fortifying with protein ingredients,
a formulator should identify nutritional
targets and claims up front and then select
the best protein or multiple proteins, in the
many varied formats that are available,
to reach those goals," says Mr. Moser.
"They should consider taste and cost, as
well as functionality and ingredient
interactions."
