like fresh fruit, pieces can be infused with humectants,
producing a moist fruit piece with a soft texture and
good piece identity. Almost all fruits can undergo the
drying/infusion process. From exotic tropicals to traditional domestic fruits, pieces can be customized into
different sizes and cuts. For economic reasons, some fruit
pieces can even be made to taste like other fruits.
For example, dried apple bits are very versatile and
extremely economical when compared with many other
fruit inclusions. The cost of apples is relatively stable.
Apple pieces can be infused with other fruit juice solids
and flavors, transforming the flavor of the apple piece.
"This use is common when a formulator is trying to lower
product costs but still wants to use real fruit," said a director
of quality and technical services at a Pacific Northwest fruit
processor. "Low-moisture apple pieces can also be infused
with humectants such as high-fructose corn syrup or sugar
to give the apple piece a softer, chewy texture. Infused apple
pieces have moisture contents ranging from 3% to 5% and
maintain low water activities."
Apples are high in fiber and packed full of vitamins.
Research shows that apples are a natural source of phytochemicals, which have been linked to reducing various
forms of cancer and the risk of heart disease.
Cranberries, like apples, have a healthful halo. Cranberries contain natural compounds called proanthocyanidins, which possess bacterial anti-adhesion properties. While the anti-adhesion properties of the cranberry
are well doc- umented in the area of urinary
tract health, emerging
science suggests that
cranberries may also be
high in antioxidants
and powerful protectors of health in other
parts of the body.
For baking applications, dried cranberries are sweetened
to enhance the delivery of the tart flavor.
Like apples, cranberries can be infused
and flavored to simulate other fruits. Because
cranberries are relatively inexpensive, they present bakers with another economical alternative to other
fruit inclusions.
Recently, through processing and equipment
enhancements, soft and moist sweetened dried
cranberry ingredients are now said to be plumper,
juicier and more succulent than previous renditions. The improved cranberries have a brighter
color and a fuller shape, making them considerably more cranberry-like in appearance.
"Our customers say there is a noticeable difference with the new and improved sweetened dried
cranberry. Not only is it visually more appealing,

but it also brings that extra juiciness to products," said one R&D
manager.
These sugar-infused, dehydrated
cranberries have a sweet/tart flavor
and can be sliced to various dimensions. The texture and moisture content can be modified according to customers' needs. They are a popular valueadded ingredient because of their healthy
proposition, process tolerance and ability to sustain
their vibrant color throughout the baking process.
In France, product developers are aggressively formulating with cranberry ingredients as a result of the
approval of a health claim for cranberries. The French
government's food safety authority recently confirmed
that the powder and juice of North American cranberries (vaccinium macrocarpon) "help reduce the adhesion
of certain E. coli bacteria to the urinary tract walls."
Raisins are commonly used in bakery formulations. "Raisins not only add flavor, color and texture, they contribute
to overall iron, thiamin, magnesium, potassium and copper
levels," said an industry marketing consultant. "Raisins also
contain dietary fiber, including soluble fiber. In fact, 100 g of
raisins contain 5.3 g of fiber, 59% of which is soluble.
"Raisins also contain phenolic compounds, several of
