Lutein and zeaxanthin are yellow compounds found most often in green leafy
vegetables such as spinach, collard greens
and kale. Like beta-carotene, they are vitamin A precursors with good antioxidant
properties. (They are similar to beta-carotene but with a hydroxyl group on each
of the end ring structures.) The most
prominent positive health benefit found
is in connection with age-related macular
degeneration (AMD), the loss of eyesight
caused by retinal decay. Lutein and zeaxanthin (in amounts up to five times the
average US daily intake) definitely slow
the onset of AMD, and some studies indicate that they can partially reverse it.
Lycopene is similar in structure to betacarotene except that the rings on the two
