Break through limits on added fiber
Adding enough of a good thing such as dietary fiber to crackers can pose
problems. It's hard to get enough traditional fiber into snack crackers to qualify
them for "good" or "excellent" claims. Bridging the "fiber gap" is a task that
the Fibersol family of soluble corn fiber ingredients addresses, according to
Marcee Place, ADM/Matsutani LLC's general manager.
"It is a great way to reduce sugar and calories in all types of snack
formulations while giving consumers irresistible products with added fiber,
"
Ms. Place said.
Snacking has replaced at least one meal a day for 45% of Americans,
according to Technomic research, and data from Mintel found launches of
whole-grain snacks skyrocketing since 2000. But not all whole grains are full of
fiber, ADM/Matsutani noted.
"Consider this product development dilemma: To earn the Whole Grain Council's
stamp, a cracker product must contain 8 to 16 g whole grains in each serving, said Kati Ledbetter, ADM product
"
development scientist. "But even with that much whole grain content, the same serving, depending on the grain,
may fall short of the respective 2.5 or 5 g of dietary fiber required to make a 'good' or 'excellent' source fiber claim.
"
Taste, color and processing problems, including hydration and texture, often accompany use of insoluble
fibers. Fibersol soluble corn fiber, one of the most concentrated forms of fiber available, solves these issues with
minimal process adjustments or sensory drawbacks.
Developed for sampling at this year's IFT Food Expo, Cajun-seasoned whole wheat crackers used Fibersol-LQ
and Fibersol-2 corn fibers to boost fiber to 6 g per 28-g serving while cutting sugar content by one-quarter and
total calories by 15%, noted Hanna Moser, ADM product development scientist.
