to cheaper brands and that 81% liked the concept of a
value brand offering only better-for-you items.
As snacks fill the void between meals, they must
consider more than just nutritional needs. And taste
remains king in snacking. "Millennials care a lot more
about what they're putting in their bodies," Mr. Bartlett
said. "The problem is they don't want to sacrifice taste.
There are so many innovations happening in food that
are allowing us to come up with less processed ways of

doing things that still taste good. That's the key - it has
to taste good."
Whether it's fresh, natural, healthy, organic or
allergen-free, millennials are looking for real food and
authenticity. Marketing, packaging and ingredient labels
can all do their part in conveying these messages and
provide the transparency millennials crave. As the influence of this generation grows, so too must baking and
snack companies' ability to connect with them.

Putting faces to the facts
Baking & Snack's team of "millennial editors"
sat down to discuss the trends shaping the
industry and found themselves aligned with
some of their generation's shifts and opposed
to others. Charlotte Atchley, senior editor; Nico
Roesler, managing editor; and Anna Wiber,
digital media associate editor, offer their takes
as members of this influential generation and
baking industry journalists.

How do values play into your purchasing
decisions when it comes to food?
Anna Wiber: There are some brands I'm
learning about that seem to be more transparent and ethical in the way they operate
their business. I'm more likely to select this
brand when it's the same three products in
front of me.
Nico Roesler: It's more than a purchase. Maybe
we're even funding something we believe in.
Charlotte Atchley: I think something we have
learned that previous generations maybe
didn't connect with is that we know our money
is how we make a difference, and we vote with
our dollars.

What motivates your bread purchases?
Ms. Atchley: I mostly buy the same loaf of bread
every week. I have my bread that I've chosen,
and I buy whole grain because it's supposed to
be the best for you. It's all about perception, the
healthy halo.
Mr. Roesler: I'm willing to pay more for the
healthy halo if it has nuts or grains on top of
it because that means more protein, more
nutrients. That versus white bread, which is just

sugar ... at least, that's how I see white bread,
just empty calories.
Ms. Wiber: I feel like for bread, I buy from the instore section. Unless it's for hamburgers or hot
dogs, and then I buy the most affordable option.

When and why do you snack?
Ms. Atchley: It's about satiety, then health. I want
something that's going to keep me full, and if it's
healthy, then that's even better.
Mr. Roesler: If I'm replacing a meal with a snack,
it has to be healthy and convenient. I buy bars a
lot because you feel like you're getting that sustenance, and it feels like a more complete meal.
It doesn't feel exactly like snacking.
Ms. Wiber: I cannot replace lunch or dinner
with a snack. Breakfast is the only meal I'll
replace. I wake up and go to work, and if I'm really hungry and coffee doesn't sustain me, then
I will go get a yogurt or a muffin.
