AIB International offers new
online courses
AIB International, Manhattan, KS, teamed up with Alchemy
Systems, Austin, TX, to offer commercial and retail bakeries online training services. AIB's Baking Specialist Online Collection includes nine courses through Alchemy Academy's digital platform.
These courses provide the fundamentals of baking production
in an e-learning format.
The platform currently offers five core courses - Baker's Math
and Science, Bread Quality, Bread Manufacturing Process, Bread
Troubleshooting, and Function of Ingredients - and four specialty courses on pan bread, tortillas, hamburger buns and hearth
bread. The classes can be purchased individually and taken at the
student's pace.
Each course consists of modules that include an instruction
section, learning exercises and "knowledge checks" to test comprehension. Courses can run for two to six hours depending on
the subject matter. The interface is similar to an Amazon shopping
experience where users can search for courses, register, pay with a
credit card and start learning at their convenience.
Alchemy Systems offers a range of courses, tools and templates for
food industry professionals that cover food safety, workplace safety,
human resources, operations and expert consulting and has worked
with companies including Snyder's-Lance, Charlotte, NC; Dawn
Foods, Jackson, MI; Conagra, Omaha, NE; and The Kellogg Company,
Battle Creek, MI. For example, the platform helped Rudolph Foods,
Lima, OH, achieve an 11% reduction in customer complaints.

Mintel predicts growth for
specialty foods
Expect continued strong growth of specialty food and beverage
sales in the years ahead, said David Lockwood, director of Mintel
Consulting, Chicago.
Mr. Lockwood highlighted the category's rapid growth over the
past couple years, and the potential for further growth is huge,
he said during a presentation at the Specialty Food Association's
Winter Fancy Food Show held Jan. 21-23 in San Francisco.
Growth of this market dipped sharply from 2015 to 2016, driven
by food price deflation and retail consolidation, but rates are projected to rebound during the next five years, Mr. Lockwood said.
"What you've seen is, in 2012 to 2016, an average compound annual growth rate of 9%, and going forward for 2017 to 2021, we
have it at 7.9%, only dropping off one percentage point," he said.
Among the fastest growing specialty food categories are wellness bars, refrigerated lunch and dinner entrees and frozen desserts. The largest specialty food categories include chips, pretzels
and snacks. "Salty snacks never stop growing," Mr. Lockwood said.

In Memoriam
Curtis Chapman, a retired executive with Flowers
Foods, Inc., Thomasville, GA, whose career spanned
more than four decades, died Jan. 23. He was 83
years old.
Mr. Chapman joined Flowers in 1957, working
in various sales management positions at the comChapman
pany's bakeries in Thomasville, as well as Jacksonville, FL, and
Opelika, AL.
In 1967 he was named vice-president of sales for the Thomasville
bakery, and he was promoted to president of the bakery in 1973. In
1977 he was named regional vice-president for Flowers Industries.
He continued to serve in leadership roles at the company until his
retirement in 1999.
Lowell Hawthorne, CEO and founder of Golden
Krust Bakery & Grill, Bronx, NY, passed away Dec.
2. He was 57 years old.
Born to two bakery owners, Mavis and Ephraim
Hawthorne, Lowell Hawthorne grew up in St.
Hawthorne
Andrew, Jamaica, and was the sixth of 11 siblings. In
1981, he left Jamaica for the US, where he would eventually open
Golden Krust.
In 1989, Mr. Hawthorne pooled money from his siblings and
their spouses to open the first Golden Krust. The company quickly
took off and expanded to more than 100 restaurants across the
country while remaining a family-owned and operated business.
Mr. Hawthorne is survived by his wife, Lorna, and their three
sons and daughter, all who serve in different roles at the company.
Anton "Tony" Stricker, a baking industry veteran,
passed away on Dec. 10 at the age of 89. He owned
and operated Swiss Maid Bakery and founded The
Practical Baker, both located in Harvard, IL.
Mr. Stricker was a member of the Baker's Dozen,
American Society of Baking, Harvard Lions Club
Stricker
and the Harvard Moose Lodge. In 2014, he received the Retail
Bakers of America Emeritus Award.
Mr. Stricker was passionate about baking, farming, engineering
and video production. He will be remembered for his laugh, infectious smile, jokes and storytelling, according to his obituary.
He is survived by his five sons, 17 grandchildren, three greatgrandchildren and life partner Patricia Kyle. Mr. Stricker was preceded in death by his wife of 57 years, Shirley; his son, Eric; and
two brothers, Roger and Teddy.
