Mark Peel, co-founder of
La Brea Bakery, dies
Mark Peel, who along with Nancy Silverton
co-founded La Brea Bakery, Los Angeles,
in 1989, died June 20 shortly after being diagnosed
with cancer. He was 66 years old.
Regarded as a founder of California
Peel
cuisine, Mr. Peel started cooking in the
1970s. He began his career working with
Wolfgang Puck at Ma Maison, later moving
to France, where he worked at La
Tour d'Argent and Le Moulin de Mougins. Mr. Peel returned to
California to work at Michael's of Santa Monica and Chez Panisse.
In 1989, Mr. Peel co-founded La Brea Bakery with his thenwife,
Ms. Silverton. Originally just a small storefront bakery, La
Brea Bakery in the late 1990s opened a production facility in Van
Nuys, Calif., making it the largest artisanal bakery in the United
States. Mr. Peel and Ms. Silverton sold La Brea Bakery to Aryzta
in 2001, and is now part of Aspire Bakeries. Shortly after founding
La Brea Bakery, Mr. Peel created, co-owned and served as executive
chef for Campanile restaurant, where he spent more than 23
years. He later opened The Tar Pit, which combined his passion
for market-fresh food with the excitement of artisan cocktails.

BBU suing PTO over
Artesano trademark denial
Despite being on the market for more than five years and generating
nearly a billion dollars in sales, the Artesano trademark used
by Bimbo Bakeries USA (BBU), Horsham, Pa., on its pre-packaged
sliced bread is not protected. BBU's parent, Mexico Citybased
Grupo Bimbo SAB de CV, is trying to change that.
Grupo Bimbo filed a lawsuit in the US District Court for the
Eastern District of Virginia Alexandria Division appealing the US
Patent & Trademark Office's (PTO) decision denying registration
of the Artesano trademark, which Bimbo has used since 2015.
The PTO has refused to register the Artesano trademark, contending
that " while the Artesano trademark has acquired distinctiveness
as a trademark, it is a generic term for pre-packaged
sliced bread and thus barred from registration, " according to the
complaint.
Grupo Bimbo noted in the lawsuit it owns approximately 18
foreign trademark registrations for Artesano for bread in different
Spanish-speaking countries, including Mexico.
Grupo Bimbo, though, said the Artesano brand has been " an
immediate success " since its debut in 2015, with retailers selling
approximately $1 billion of the pre-packaged sliced bread.

White Castle to double size
of Ohio retail food plant
Fast-food hamburger chain White Castle, Columbus, Ohio, broke
ground on the expansion of a retail food manufacturing plant in
Vandalia, Ohio. The facility, which has been named " The House
That Bill Built " in honor of former president and chief executive
officer Bill Ingram, will supply packaged sliders to retailers across
the United States.
White Castle said it plans to invest $27 million in the expansion
project, which should be complete by June 2022. The expansion
will double the size of the plant, from approximately 75,000
square feet to 150,000 square feet. The expansion also will create
75 jobs, bringing total employment at the plant to 235.
" Our retail division has been growing steadily over the past 10
years, and we saw huge growth last year as people cooked and ate
at home more during the pandemic, " said Lisa Ingram, president
and CEO of White Castle and daughter of Bill Ingram.

Mondelez moves to 100%
renewable electricity in UK
Mondelez International Inc., Chicago,
is now using 100% renewable
electricity at all six of its production sites in the United
Kingdom, including its iconic Bournville facility, which is the
home of Cadbury in the UK. Mondelez already uses 100% renewable
electricity at facilities in Australia, Mexico and New Zealand.
Mondelez said the transition to 100% renewable electricity
sourced within the UK for these production sites will allow it to
offset the equivalent of 2,900 individuals' annual CO2
a figure based on the UK government's findings that the average
Brit emits around seven tonnes of CO2
annually.
" Using 100% renewable electricity, that is also generated here,
across our six production sites is a huge step toward reducing our
carbon emissions here in the UK, whilst supporting our global
target and our mission to make our snacks in the right way, " said
Louise Stigant, UK managing director at Mondelez.
