tank to integrate with your applicator -
that is the most important thing that any
producer can do, " Mr. Moline said. " The
icing viscosity is directly correlated to the
temperature that you hold it at. "
This means that the warmer icing becomes,
the less thick and runnier it will
be, while the inverse is also true.
" Having a system, especially with a
holding tank that transfers to an applicator
and then back from the applicator to
the holding tank, making sure that your
icing is always at a consistent temperature,
is the most critical thing that you
can do to ensure an even application, "
Mr. Moline explained.
Consistency requires constant
regulation, and with it, bakers can
achieve unvarying product despite
changeovers.
" To do this effectively day in and
day out, many standardization factors
must be met, from freshness of
icing, temperature, product heights to
the operation of the equipment, " Mr.
Hatch said. " The good news is we understand
these variables and can help
customers navigate through the confusion
to ensure success. "
Portions, ratios and viscosities all
play into how an icing or a filling will
be applied to a product. The equipment
