MAKING MONEY
ON WEDDING CAKES
IT ALL STARTS WITH KNOWING WHAT YOU CAN, AND CAN'T DO, FOR A PROFIT.
On the first Monday of every month,
acclaimed wedding cake designer
Minette Rushing sets aside her cake
decorating supplies to focus on what
she refers to as "Money Monday." This
is the all-important day when she
shifts gears from counting the time
until her next consulting appointment
to counting the pertinent numbers that
she depends on to be profitable.
"Everything is looked at: sales,
profits, labor costs, commodity prices,

what's gone up, what's gone down,"
says the owner of Minette Rushing
Custom Cakes in Savannah, Georgia.
"The thing that astounds me is how
many people don't know their costs.
My best advice is to know what it
costs to make your products. All
money isn't profit."
Another mistake that wedding cake
shops often make is chasing every
dollar from every bride that makes an
inquiry to your bakery.

Rushing urges cake shop owners to
clearly define your target market.
"Sometimes people throw a lot of
spaghetti on the wall," Rushing says of
the temptation to take on too much.
"Our market is the luxury bride, the
upper 3 percent of the market. By
doing that, I am better able to market
to that group, rather than try to be
everything to everybody."
