Enliten sweetener enters Europe
Corn Products International, Westchester, Ill., launched its Enliten highintensity sweetener in Europe during Food Ingredients Europe & Natural Ingredients in December in Paris. The zero-calorie sweetener sourced from the stevia plant is 300 times sweeter than sugar and is extracted without the use of chemical modification. Corn Products International in May of 2011 inaugurated a facility in Balsa Nova, Brazil, that produces Enliten. Corn Products International has an exclusive license with stevia producer Morita Kagaku Kogyo Co. Ltd. of Osaka, Japan. “Sweetener customers rely on Corn Products’ application, culinary and sensory expertise to advance their efforts in getting new products to the shelves quicker,” said Mary Lynne Shafer, manager, business development for Corn Products International. “The unique value proposition of Enliten makes it ideal for use in virtually any food or beverage application, specifically low-calorie or clean label products.”

Jungbunzlauer now supplies lactic acid and salts
Jungbunzlauer has started producing and supplying lactic acid and salts. The portfolio contains food and technical grades of lactic acid in concentrations from 50% to 90%, including heat-stable variants as well as 60% food grade sodium lactate and potassium lactate. Potential applications within the food industry include baked foods, beverages, meat products, confectionery items, dairy products, salads, dressings and ready meals. Lactic acid typically serves as either a pH regulator or as a preservative, and it may be used as a flavoring agent. Produced in Jungbunzlauer’s plant in Marckolsheim, France, the company’s lactics are made by fermentation of natural carbohydrates. Jungbunzlauer also produces citric acid and gluconic acid obtained by fermentation. “As a sustainable and responsible leader in naturally produced ingredients, we see a strong fit of lactics that speak to our top industry standards,” said Peter Luck, director of sales. Swiss-based Jungbunzlauer has a U.S. office in Newton Centre, Mass.

Lycopene formulation adds color to surimi
LycoRed, Beer Sheva, Israel, has developed a tomato lycopene formulation tailored specifically for use as color in surimi applications. It allows food manufacturers to avoid artificial colorants as well as carmine, which is extracted from cochineal insects. Surimi’s texture and color often are identical to the meat of lobster, crab or other shellfish, according to LycoRed.

Scales work in food processing
Ohaus Corp., Parsippany, N.J., offers a line of CKW Checkweighing Scales that may be used in food processing applications. They include an IP66/NEMA4X indicator and a base with an open framework designed for cleaning in washdown environments. A tri-color bar graph may be programmed to alert operators by displaying each of the 24 segments individually, by color block, as a continuous bar, scaled to the capacity of the target weight. It also may be turned off.

SaltWorks opens new factory
SaltWorks, Inc., Woodinville, Wash., has opened a 100,000-square-foot gourmet salt factory, which coincides with the company celebrating its 10-year anniversary. The new headquarters, which features more than $3 million in upgrades, includes an upgraded natural smoking facility that quadruples the company’s salt smoking capacity. The factory will be a natural salt flavoring, smoking, cleaning, sizing and packaging facility. SaltWorks offers more than 110 different varieties of gourmet salts. “This is just the beginning,” said Mark Zoske, founder and chief executive officer. “We will continue to pioneer the natural salt industry and offer the best quality and most ground-breaking products possible. With the best technology out there, SaltWorks is able to not only innovate, but also to preserve the unique artistry of each specialty salt.”
