Nu-Tek executives see different attitudes on sodium reduction

Nu-Tek described the Khosla transaction as a “major partnership” and an equity stake taken by a prominent group in the venture capital space. Looking at the market for sodium reduction, Mr. Mower said makers of sliced meat have made meaningful progress. “The early adapters are makers of processed meat and poultry,” he said. “They clearly recognize the issue, and there is consumer recognition that the products have contained a lot of sodium. Management of these companies has recognized it is something they need to address.” Other important industries may be lagging, but they will make progress, said Mr. Mower, who joined Nu-Tek in October 2011 following an extended career in the snack foods business. “I would say the dairy category, cheese is No. 2,” he said. “Bakery is probably the furthest behind. Recognizing the Centers for Disease Control identified bakery as the No. 1 source of sodium in the diet, I believe there will be more recognition that the bakery industry needs to move on sodium reduction.” Khosla manages a fund supporting early- and latestage investments and a seed fund for developing earlystage experiments. Vinod Khosla, who was a co-founder and chief executive officer of Sun Microsystems, established the firm in 2004. Mr. Khosla also spent time as a general partner at Kleiner Perkins. entrepreneurial ventures in clean technology areas such as biorefineries for energy and bioplastics, solar, energy storage, agriculture, food and other technologies as well as traditional venture areas like the Internet, computing, mobile and silicon technology arenas. “This investment will be used to increase infrastructure and overall capacity and accommodate growing client and market needs,” Nu-Tek said. “The increase in production of Nu-Tek Salt’s improved potassium chloride solution is being made to meet the demand of food companies searching for unprecedented reduction in sodium levels.” Asked about the investment appeal to venture capital firms of a sodium reduction technology, the Nu-Tek executives said it was the size of the overall opportunity. “This is potentially a very, very big market,” Mr. Manuel said. “There are probably 15 billion lbs of salt in the western diet,” Mr. Mower said. “Even if you take out a low number, 20% or 25%, you can see that’s a large amount that would be taken out of processed foods. It’s a big market that’s being driven by medical research.” Mr. Mower said Nu-Tek’s focus on meat, cheese and bakery is no coincidence. “One thing that makes this so attractive is that this is patented technology that works well across so many segments, especially processed meat, cheese and baking,” he said. “Seventy per cent of sodium in the diet comes from processed foods, and about 80% of that comes from those three categories.” “Another big driver of change is packaging,” Mr. Manuel said. “The Grocery Manufacturers Association voluntary front-of-label packaging will include sodium, calories and fat much more prominently presented to the consumer.”
