retail perspective: equipment innovations abound Small-scale wholesale bakery operations seek to improve efficiencies and save on labor costs. BY JOHN UNREIN, bake The expanding scope and cost of government regulations are placing new burdens on small businesses in the US, hindering their ability to create jobs and drive economic growth, according to a new survey released this May by the National Retail Federation. Nearly 60 percent of small business owners surveyed believe proposed regulations to fine companies that allow flexible employee schedules due to changing worker demands or business needs would hurt their businesses. Overtime expansion proposed by the Labor Department would likely result in negative consequences for nearly half (44%), according to the survey. And more than one-third (37%) of small retailers say raising the minimum wage to $15 per hour would either cause their business to fail or threaten its existence. Faced with such harsh realities, retail and intermediate wholesale bakery operations are, in some cases, pursuing central production facilities to enhance their efficiencies and save on labor costs. At IBIE, retailers and bakers can expect to find the latest solutions to these current challenges. City Bakery, for example, has started construction on a new production bakery in Fletcher, NC. In order to meet the demands of its growing wholesale and retail business, City Bakery will move all of its bread production, presently baked in Asheville, NC, to the new facility, according to a company release. Upon completion in Taylor Petrehn of Lawrence, Kansas retail bakery 1900 Barker bakes his breads in a new TMB four-deck oven, with 40 loaves capacity. 118 / PreShow Guide / IBIE 2016
