It's About the Future by Laurie Gorton, Baking & Snack P Plenty of bakery executives, operations managers and engineers look at IBIE as their business' ticket to the future. Their actions at the show and afterwards prove it. The largest - notably Bimbo Bakeries USA, East Balt and Flowers Foods, among others - send sizeable teams to IBIE, often two dozen or more individuals. For example, at the previous IBIE, Flowers Foods, Thomasville, GA, brought in close to 45 upper and middle managers from corporate as well as the regions, according to Mike Beaty, chairman of the 2013 show and then the executive vice-president of supply chain for Flowers. "It's more than just operational personnel. We have plans and strategies. We even have our CFO with us," he said. After sitting in on relevant education sessions before the show opens, bakery team members fan out on the exhibit floor to survey the booths. Rallying late in the day or the next morning, they report their hunting-andgathering efforts, cuing senior managers to developments warranting closer attention. "This is a buying and selling show," said Jack Lewis Jr., chairman of the 2007 show and president of Lewis Bros. Bakeries, Evansville, IN, as he cut the ribbon. "All you bakers, let's go buy something." For some bakers, the IBIE search is more of a family affair. Long before managers at Chelsea, MA-based J.S.B. Industries decided to add a second bakery at Lawrence, MA, they knew how they wanted to equip it. "My father has been eyeing serpentine oven technology ever since he first saw it 15 years ago at IBIE," said Scott Anderson, vice-president, operations. "This building is our future: The sky's the limit here," he added about the bakery that started up in 2011. When Always Bagels of Bohemia, NY, decided to bring manufacturing of authentic New York bagels to a new bakery at Lebanon, PA, the owners acted on their preference for new equipment. "And we did a lot of our shopping at IBIE 2007," said Anthony Pariti, vice-president and partner. The new bakery opened in 2010. "We wanted to build a bagel manufacturing facility like no other," said Anthony's father, Tony Pariti, Always Bagels' chairman and partner. "We've accomplished that, and the feedback from customers and equipment vendors has been, 'This is the top of the line.' " Big or small, IBIE shows innovations for all, now and into the future. With exhibits covering more than 700,000 sq ft, IBIE offers plenty of prototypes and working equipment for attendees to prod, poke and comb through for potential purchase. Increasing frequency Now held every three years, IBIE - or Baking Expo, as this event was known before 2001 - and its timing reflect the quickening pace of technical progress in the baking industry.
