Regulation spurs creation
Under regulatory pressure, edibles bakery found inspiration
W
hile conventional
baking companies
are dealing with
changing regulations regarding
the Nutrition Facts Panel,
PHOs and fiber ingredients,
bakeries producing cannabisinfused baked goods - edibles
- must constantly adapt to
ever-changing regulations. For
the cannabis baking industry,
wrestling with regulation is a
completely different ballgame.
"We have had no shortage
of curveballs in the industry,
and most of it revolves around
it being a new industry, especially in Colorado," said Julie
Berliner, founder and owner
of Sweet Grass, Denver. "The
regulations were being written
as we built our business, and
we never really knew what was
around the corner. Knowing
that was a constant allowed us
to get in the mindset of constantly being agile."
Because of the edibles industry's special ingredient, strict
regulation has been necessary to preserve public safety
and help promote consumer
education. Ms. Berliner and
other business owners have
worked directly with the Colorado state government to ensure regulations not only protect public health but are also
practical. Still, the regulations
placed upon cannabis bakeries
are strict and can make staying
in business a challenge. Some
companies have struck out
when faced with a constantly
shifting regulatory landscape
and quick compliance deadlines, often as quick as one
year. Ms. Berliner, however,
didn't see striking out as an
option, so she tried a different
approach. Instead of resisting
regulations, she adopted an attitude of allowing regulation to
force her company to be more
creative and innovative with its
products and process.
"When these regulations
and packaging requirements
came into play, we just had to
figure it out and used it as a
product innovation and embraced it instead of resisted
it," Ms. Berliner explained.
