SANITARY DESIGN
Those principles today lay the foundation for
how much of the equipment is now built from a
sanitary design standard to ensure food safety and
effective cleaning.
Despite the sea change toward hygienic design,
most bakeries have legacy equipment that make
it challenging to clean and maintain today's food
safety standards. A plant's mixers, dividers and
even conveyors may be just a decade old, but
bakeries with equipment that was installed before
FSMA may discover that upgrading it to current
regulations might be easier said than done.
Designed for simple cleaning
In ABA's Bake to the Future podcast, Karl Thorson, the
global food safety and sanitation manager at General
Mills, Minneapolis, explained how the role of sanitary
design allows the industry to make smarter decisions
about building and operating manufacturing facilities
and choosing equipment cleaning strategies. He
added that sanitary design can reduce complexity for
employees in executing their work, which is especially
helpful in the face of staffing challenges.
" A lot of facilities and systems were put in
place many years ago, before we understood
all the risks involved, " Mr. Thorson said. " Today,
there's a greater incidence and understanding of
foodborne illness, allergens and other problems.
There's a lot of opportunity to make things
better. "
Mr. Mirdamadi told ASB attendees,the issue of
sesame as an allergen shouldn't have come as a
surprise for the wholesale baking industry.
" When it comes to hygienic design, if you
were building a bakery within the past five to
eight years, and you didn't at least consider the
likelihood that sesame would become an allergen
in the US, you probably missed out on a big
opportunity to make improvements in your design
because we all knew it was an allergen in Canada, "
Mr. Mirdamadi said.
When it comes to food safety, there's always
an elephant in the room. Sanitary design for
equipment is doing more of the heavy lifting these
days so bakeries can spend more time producing
safe baked goods for their customers.
