Despite having a higher dollar velocity in cakes, dollar contribution to department in the East was actually lower than other regions, representing 22.9% of total bakery dollar sales. In the East, wedding cakes demonstrated the strongest growth, up 22.7% in per–week-per-store dollar sales versus the previous 52-week period. The Central region had the second highest per-store-per-week sales of $3,001, up 2.1% compared to the previous period. Cakes contributed 27.9% to bakery department dollar sales in the Central region. Specialty dessert cakes recorded the largest

dollar sales increases in the Central region, up 46.6%. The West region increased cake sales 2.7% to average $2,807 per store per week, comprising 28.3% of bakery department sales. Wedding cakes demonstrated the largest dollar sales growth in the West region, up 156.6%, followed by mousse cakes with growth of 21.2%. The South region had the lowest cake dollar velocity with $2,631 per store per week, up 2.5% compared to the previous period. Overall, cakes had the highest contribution to bakery sales in the South, accounting for 32.9% of all department sales. The largest gains in the South occurred in

mousse cakes and tortes, up 26.3% and 11.7% respectively.
