Get Into Whole Grains
Look out, Dr. Atkins…grains are making a comeback, thanks to the benefits of whole grains—and their growing prominence in the grain category of the food pyramid and dietary guidelines. At the end of January, the U.S. Department of Agriculture and Department of Health and Human Services released the 2010 Dietary Guidelines for Americans, which is updated every five years. The 2010 guidelines, which address the current obesity crisis among American children and adults, is meant to educate both professionals and consumers in making better—healthier—food choices. And one major change this includes is increasing whole grain consumption within the grain category of the food pyramid. In the past, grains have carried negative connotations, thanks to refined grains, such as white breads, rice and pasta, that are missing the bran, germ, and/ or endosperm and are high in carbohydrates and sugars. Americans have never had a problem consuming the recommended portions of grains; but the problem has been that most of the grain intake has been refined grains, not whole grains, such as brown rice, oatmeal, buckwheat and whole-wheat breads, which are made from the entire kernel. The new Dietary Guidelines address this by qualifying the kinds of grains Americans should be consuming. It is now suggested that at least half of the grains consumed should be of the whole-grain variety, and that whenever possible, Americans should increase their whole-grain consumption. According to the report, research has shown vast benefits to a diet that includes whole-grain foods. Whole grains have been associated

When in doubt, check the label. The 2010 Dietary Guidelines suggest that if the only grains an ingredient list are whole grains, the product is 100% whole grains. Otherwise, check the placement of whole grain in the ingredient list—it should be the first or second listed after water, or if there are multiple whole-grain ingredients, they should appear near the top of the list. The higher on the list, the closer the product is to 100% whole grain. Products whose labels have the FDA’s health claim must have 51% of the total ingredients (by weight) as whole-grain ingredients (other criteria not mentioned in the report apply). WATCH OUT! Claims such as “a good source of whole grains” don’t hold much water, as there is not an established definition of what constitutes an “excellent” or “good” source of whole grains.
