Special Report
Back to School Promotions
Every August and September, millions of households
prepare for the annual “Back to School” ritual. It is also
an appropriate time of year for instore bakery managers
and merchandisers to go “Back to School” – by studying
their own past promotional and merchandising efforts to
determine which strategies and tactics made the grade.
One lesson learned from the recent recession is
that supermarkets, too often, simply tread water with
promotional activities rather than execute promotions
that drive incremental volume.
A recent Willard Bishop study of six markets found
that 38% of supermarket sales were made on promotion
during the past year. But, only 37% of those promotions
resulted in incremental volume gains. The rest turned out
to be subsidized sales that would have been captured
regardless of discounts. By contrast, the Willard Bishop
study pointed to the highly effective promotions of “bestin-class
retailers” that achieved 73% incremental gains
from their promotions during the past year.
So what separates their efforts from others? The
study identifi ed the following three ideas that are essential
for your bakery operation to succeed:
1. Discovery and Diagnosis – gained through determining
shopper behavior, capturing supplier partner
experiences and analyzing historical promotions.
2. Strategy Development – creating promotional
strategies that instore bakeries can follow when building
promotional offers based on comprehensive analyses
aligned to shoppers, vendors, category roles, and offer
frequency and seasonality.
3.
Strategy Implementation – rolling out a strat-
egy for long-term benefi t that involves benchmarks and
metrics, technology, supplier partner interaction, and
new processes.
The message is clear. Doing your homework, which
includes cooperative planning of successful promotions
with a supplier partner like Dawn, is essential to success
in driving incremental sales in the sweet baked goods
categories. Dawn Food Products is uniquely positioned
in the bakery business to help provide such analyses
because of its innovative products and its commitment
to conduct extensive research that sheds valuable light on
the shopping patterns and preferences of bakery consumers.
This Dawn White Paper presents Dawn proprietary
data and syndicated Perishables Group FreshFacts data,
revealing key insights for promoting cakes, cookies,
donuts, muffi ns, cupcakes and brownies during the Back
to School time period.
