Baking Theater
Adding theater to the bakery and deli departments is simpler than ever, thanks to equipment innovations. A number of equipment companies have introduced new products in compact footprint designs that enable instores to produce more efficiently in a smaller amount of space. Oliver Packaging & Equipment Company introduced the Bakefresh self-service bakery oven, which produces hot baked bread products that are available to shoppers on demand. The baking cycle time of the Bakefresh oven ranges from 6 to 20 minutes, with a maximum output of 200 pieces per hour. This energy-efficient oven drops fresh baked rolls and other breads into a convenient bin for shoppers to choose as many hot breads as they want. The fresh baked aroma drives traffic to the bakery department. Revent demonstrates the advantages of the 4-pan and 8-pan Wiesheu compact baking ovens, which are engineered to reach desired baking temperatures quickly while using low power consumption. Designed for display baking, it can easily be viewed while creating an image of freshness, helping drive impulse sales. Another new product innovation is the Dibas 64M seven-tray baking oven with the disappearing door, also from Wiesheu. The Dibas door disappears sideways into the housing, either fully automatic at the touch of a button or manually. The disappearing door helps prevent one of the most common workplace injures—oven burns. WP Baking Group features the Brillant Convection Oven, which offers the convenience and efficiency for baking many different baked goods (rolls, bread, baguettes, puff pastry, snacks, cakes and more) with a Duo Steamer System that delivers excellent baking results.

Stronger Pans
Sheet pans are the most common bakery pan, but also the most prone to failure due to the inherent nature of the design and use of the pan. Whether from the softening of the aluminum during repeated bakes at high temperatures or bakery handling procedures, sheet pans tend to flare and bow over time. The new StayFlat 16 gauge Aluminum Sheet Pan from Chicago Metallic has sidewalls that are continuously reinforced with an engineered rib that increases its sidewall strength up to 30%. This feature coupled with a concave bottom and residual tensile stress, which adds strength in the metal itself, results in a pan that resists bowing and stays flat longer. The StayFlat Sheet Pan features sidewalls that are continuously reinforced with a horizontal engineered rib. This feature increases sidewall strength up to 30% and provides an easy visual identification reference for those special-use situations in your operation where stronger, flatter sheet pans are required, such as for transport or for baking pies and cakes.
