Easy Baked Cheeses
Nothing says “home” like warm, gooey cheese, and a few new products are making it easy to indulge. Riverside Foods has launched Oven-Ready Cheese Curds and Mini Mozzarella Egg Roll Wraps. Both products come ready for the deep fryer or oven, and are in high consumer demand. And the cheesemakers at Pasture Pride have crafted a unique specialty line of Oven Baked Cheese. It’s is a combination of two layers of toasted, buttery-tasting, squeaky cheese filled with a layer of flavorful zesty cheese. It can be heated in the oven, microwave, skillet or grill. Inspire indulgence by incorporating these, or similar products into your cheese lineup.

Here Comes the Cheese
A lot of emphasis is placed on the staggering divorce rate in this country. But what is not as heavily discussed is what that means for marriages. The number of second and third weddings is also growing. And often, couples who fall into that category look for non-traditional items for their weddings—including non-traditional cakes. According to the Wisconsin Milk Marketing Board (WMMB), cheesemonger Ken Monteleone, owner of Fromagination Artisanal Cheeses & Perfect Companions in Madison, WI, has created several custom wedding “cakes” made entirely out of cheese. In an interview with WMMB, Monteleone said, “We did one with a cave-aged Cheddar, Pleasant Ridge Reserve and a small Blue Cheese on top. It was cut up and served as a cheese plate. You could add apricots or cranberries to make it look more festive.” Monteleone has created cheese cakes that serve upwards of 100 people for $350 to $400, providing couples with an affordable alternative to traditional wedding cakes. Talk about a new marketing strategy. . . . Source: Wisconsin Milk Marketing Board

Cheese Applications
No matter what signature dish you want to create—or if you’re looking to jazz up an existing dish—there is a cheese out there that can complement it perfectly. Tillamook offers this insight into the dishes with which some of its most popular cheeses work best: •Colby: Pairs perfectly with deli meats for classic sandwiches •Colby Jack: It’s a favorite as an appetizer, on platters, or enjoyed by itself •Monterey Jack: This kitchen favorite has a mild creaminess that pairs well with the more robust flavors found in Mexican cuisine or grilled sandwiches featuring spicy condiments and meats •Muenster: Because it melts well, it is often used in dishes such as grilled cheese sandwiches, tuna melts, quesadillas and cheeseburgers •Mozzarella: Great when used in pasta sauces or melted over meatballs on a classic hero sub •Swiss: Sliced for ham sandwiches or blended into a sauce for fondue, this cheese is a favorite for signature dishes For more information about Tillamook’s family of cheeses, visit www.Tillamook.com.
