bakerydevelopment DATA ANALYSIS AND CATEGORY MANAGEMENT Mini Bagels Drive Growth Bagel sales continued their growth over the course of the past year. Helping fuel this upward movement was the performance of mini/ bite/chunk bagels, which had doubledigit sales growth in 2011. By contrast, the larger portioned gourmet/ large bagels not only had double-digit sales declines, but also lost the most dollar share. Nationally, bagel dollar sales accounted for an average of 2.9% of bakery department sales per week per store during the 52 weeks ending Dec. 31, 2011, unchanged compared to the prior year. Over the last five years, bagel sales have grown year-over-year. Across the US, the category averaged dollar sales of $302 per week per store, an increase of 2.6% from $295 the prior year. Weekly sales for bagels fluctuated between $269 per store and $332. The East region had the highest per-store dollar average with $705 per week, more than double the sales of the next highest region, the West, with $348 per store per week. The Central and South regions had perstore dollar averages of $206 and $132 per week, respectively. In terms of dollar growth of bagels, the South was the only region to decline, by 3.2%. All other regions increased with the East up 4.1%, the West up 3.4% and the Central region up 1.3%. This growth can be attributed to increases in average retail prices from the prior year. In the East region, bagel dollar growth outpaced that of the entire bakery department.
