delidevelopment DATA ANALYSIS AND CATEGORY MANAGEMENT Pizza Components Show Gains Deli pizzas maintained popularity at the deli counter over the past year. All pizza types performed well, with double-digit dollar growth in pizza components, pizza slices and calzone/stromboli. Nationally, deli pizza dollar sales accounted for an average of 1.6% of deli department sales per week per store during the 52 weeks ending Dec. 31, 2011, up 0.1 percentage point compared to the prior year. Over the last five years, deli pizza sales have grown year-over-year. Across the US, the category averaged dollar sales of $357 per week per store, an increase of 8.4% from $329 the prior year. The top week for deli pizza sales occurred the week leading up to the Super Bowl with $411, 25% higher than the annual average weekly dollar sales. Sales also peaked the weeks leading up to Halloween/the World Series ($421) and New Year’s ($429). Whole pizzas drove growth for each of these weeks. The East region had the highest per-store dollar average with $857 per week, more than double the sales of the next highest region, the Central region, with $341 per store per week. The West and South regions had perstore dollar averages of $291 and $185 per week, respectively. Focusing on the dollar growth of deli pizzas, all regions increased, with the West up 12%, the East up 8.8%, the South up 5.8% and the Central region up 2.6%. Deli pizza dollar growth surpassed that of the entire deli department in the East and South regions, with growth in each more than twice that of the deli department. Increases in the average number of unique items on store shelves in all regions helped drive category growth. The East and West regions were the only regions where the category contribution to the deli department increased compared to the prior year, each up 0.1 percentage point.
