Knowing the exact products and services that most relate to your customers remains the single biggest determining factor to success. And instore operators are bending over backward to connect the dots and provide bakery/deli shoppers with the innovative products and enhanced store experience that customers so desperately crave. Still, new research from the International Dairy-DeliBakery Association points to a few key challenges ahead:  Shoppers prefer to know everything – from ingredients to benefits, to nutritionals, to source and delivery information.  From simple bin signage and organization to nutritional disclosure and ingredient lists, labeling plays a key role at all levels.  Visual proof that the store has proper procedures in place, and better yet, that these procedures are enforced, can be very reassuring.  When a store doesn’t provide information, shoppers are quick to come up with their own ideas, which are often untrue. These findings from the IDDBA’s new study, Consumer Shopping Dynamics: The Decision Tree, call attention to the fact that shoppers today demand a greater sense of security – far beyond what they expected a decade ago. Where the true innovators in the supermarket business will step up is in how this task is accomplished. Transparency will become a buzzword throughout the industry. Providing bakery/deli shoppers with the right information may become equally as important as selling the right mix of products.
