If that’s not a shocker, it should be a loud wakeup call that bakery and deli shoppers are craving more variety, value, freshness and culinary experiences, says Jack Li, managing director of Datassential. W IDDBA’s Dairy-Deli-Bake 2013, held June 2-4 at the Orange County Convention Center in Orlando, FL, was attended by top-ranked retail buyers, merchandisers, executives, food manufacturers, brokers, distributors, and other top industry professionals. The original exhibit floor sold out early, and three expansions were added to accommodate the demand for exhibit space, bringing the booth total to 1,740 booths and 705 exhibiting companies. Case in point: ice cream, shakes, smoothies, and pizza bars all scored high with consumers when asked what they’d like to buy in the deli department, according to Dataessential’s research for the IDDBA. “Consumers want more and more of these kinds of things in the deli,” says Li, adding that shoppers are also being driven to experiment more with food and beverage purchases because of their quests for culinary adventures. “We have more license to experiment these days than we ever have in the past,” he says. There were 8,596 registered attendees representing more than 50 countries. The positive energy created a domino effect that buoyed attendees as they sought out new products, ideas, and business partners. The show floor was extremely busy, as exhibitors and retailers cultivated new business, new marketing ideas, and new relationships. This year’s IDDBA 49th annual seminar and expo provided a valuable showcase for how today’s instore bakeries and delis can fill the gaps and meet shopper demand. The New Product Showcase was overflowing with exciting new creations and hundreds of new items. There were many more new products than there was room for in the display cases, and show attendees eagerly sought out the exhibitors so they could find and buy the latest products to tempt consumers. Indulgent Sweets Bakery exhibitors set the stage by offering new taste temptations with a wide array of indulgent sweets that feature both premium flavor and labor-saving convenience. 01. Rich Products introduced new fully baked, everyday cookies in popular flavors like frosted sugar cookies and chocolate chip. The new line is nut free, addressing the growing awareness of children’s allergies to nuts. There are four everyday items, along with seasonal flavors for holidays like Valentine’s Day or St. Patrick’s Day. 02. The new Edible Décor line of cake decorating solutions from DecoPac offers instore bakeries the opportunity to help cake shoppers celebrate with sweetness. The Edible Décor line features everything you need to decorate beautiful cakes and cupcakes, including Candy Pearls, Fondant DecoShapes, and Sanding Sugars. 4 • 2013 IDDBA Recap • instore 03. New Cake Boss Fondant Cakes and Cake Boss Cupcakes from Dawn Food Products set a new standard for instore bakeries. Master baker and cake decorator Buddy Valastro, star of Cake Boss, Next Great Baker and the new series Bakery Boss, and a Dawn Foods customer for 20 years, worked closely with Dawn Foods to create and expand the Cake Boss cake line, which includes new designs of fondant cakes and cupcakes. 04. Love and Quiches Desserts, which celebrates its 40th anniversary this year, featured a new twist for yogurt lovers with the introduction of its Greek yogurt cheesecake. Love and Quiches Desserts offers a multitude of trend-responsive product lines, including layer cakes, Sweet Singles single serve desserts, authentic cheesecakes, quiches and Gourmet Grab & Go individually wrapped snacks.
