According to the same September 2013 Technomic survey, 36% of
consumers said they selected a restaurant entree based upon the
accompanying sides, and 46% said they were less likely to order an
entree if it came with a side they disliked.
In addition, about 45% of consumers said they prefer familiar sides
to unfamiliar sides. With that in mind, here a few ideas for interesting
twists on familiar cheesy side dishes:
Pumpkin Macaroni and Cheese: Baking together elbow macaroni,
shredded Cheddar cheese, yellow American cheese, and pumpkin
puree results in a more sophisticated version of this childhood classic.
Cheesy Broccoli and Potato Bake: Cream Cheese, Swiss cheese, hash
brown potatoes, and chopped broccoli successfully come together to
combine two traditional side dishes-vegetables and potatoes-into one.
Cheddared Blue Gougères

1/2 cup water
1/2 cup milk
4 ounces (1 stick) unsalted butter, cut in cubes
Pinch each of salt, pepper and freshly ground nutmeg
1 cup flour
4 eggs
1 cup (4 ounces) Wisconsin Cheddared Blue Cheese*, shredded
Cooking Directions:
* Preheat oven to 400°F. Line baking sheet(s) with parchment paper.
* In medium saucepan, combine water, milk, butter, salt, pepper
and nutmeg. Bring to boil. Add flour all at once; stir for about 30
seconds until ball forms.
* Transfer dough to electric mixer bowl. Add eggs one at a time,
mixing on medium speed until well incorporated. Add shredded
cheese and mix thoroughly. Transfer dough to piping bag with
round tip**.
* Pipe heaping tablespoon-size rounds on parchment paper. Bake
15-20 minutes, or until puffed, deep golden brown and dry inside.
*The chef uses Dunbarton Blue.
**Or, drop heaping tablespoons full of dough onto baking sheet.
