in convenient clamshell containers.
CSM Bakery Solutions featured its new line of clean label
Simplicious muffins, as well as warm donuts with CSM's new
Superior Glaze-served fresh off of a Thermoglazer, which
thaws, heats, and glazes frozen donuts. CSM highlighted the
full product line offered in partnership with Hershey-cakes
and cookies made with HERSHEY'S Chocolate, REESE'S
Peanut Butter and HEATH Toffee. CSM's popular "Cake Case"
display showcased filling and icing ingredients with an array
of delicious cakes and parfaits with fruit and cream fillings,
decorated cakes with buttercream and fondant, and cupcakes

and cakes with flavored icings. CSM's expanded booth presence also showcased its Hispanic line, which consists of cakes,
pastries, churros, breads, and more.
Also new for 2015, CSM welcomed its new director of global
culinary, internationally acclaimed chef Morgan Larsson. Chef
Larsson, one of the most respected and sought-after executive
pastry chefs in New York City, conducted daily live demonstrations and tastings, showing attendees how to create garnishes,
decorations and different applications for pastries, cupcakes,
cakes, and other desserts using chocolate couverture and
wafers from CSM's C'est Vivant product line.

DELI, FOODSERVICE, SNACKS
At this year's IDDBA Dairy-Deli-Bake 2015 Expo deli meat
manufacturers all seemed to agree that clean labels and
healthier options would give consumers what they wanted.
Many companies showcased a variety of products that offered
one or claims of heart-healthy, clean label, non-GMO, antibiotic-free and no nitrates or nitrites. Major producers, as well
as smaller artisan companies all rolled out either new and
healthier products or healthier versions of existing products.
The San Francisco based artisan meat company Columbus
brought the commitment of clean labels to Dairy-Deli-Bake
this year. The process of cleaning up labels is often time
consuming, arduous and affects popular and long standing
products, but new management at the company believed it
was important to the brand. "We've taken nitrates out, it affects
flavor, but that's what consumers want," says Michael Fox,
senior vice president of market and innovation. In addition to
cleaner labels, Columbus rolled out a number of new products to help expose retailers and consumers alike to artisan
charcuterie. "Everybody is a foodie these days," says Shauna
Corona, customer marketing manager.
Perdue showed strong in the healthy options arena, as well.
Their Coleman Natural Foods premium line was front and
center of the efforts at the booth. The Perdue tagline "No
Antibiotics Ever" applies to all their products and means
something special to the entire Perdue team. "It's the right
thing to do," says John Moore, senior deli marketing manager.
The "ever" piece of Perdue's No Antibiotics Ever slogan means
no human antibiotics, no animal antibiotics and no hatchery
antibiotics. Perdue started the push to go antibiotic free in

2007. "It takes a lot of work to do it," Moore says. Eight years
later, Perdue's transparency shows the company's commitment to the healthy consumer.
Dietz & Watson proudly introduced its line of Originals. The
Originals line represents an example of quality above all else,
something that they believe is the cornerstone of their over 75
years of success. The products are a throwback to a simpler
time and the honest food of founder Gottlieb Dietz's day. With
a variety of organic products that contain no GMOs and minimally processed products, all come from humanely raised,
vegetarian grain fed, gestation crate free animals and contain
no carrageenan, no preservatives, no antibiotics, no added
hormones and no nitrates or nitrites.
Kretschmar continues to develop its Master's Cut line of deli
meats. Kretschmar's Master's Cut introduces a few lines at
