The Case for Hot Foods By John Unrein R etail foodservice operations, including convenience stores, face a quandary. Foodservice spending, which was up 3 percent for the year ending April 2015, did not equate to foodservice visits, which were flat in the period, according to The NPD Group. The retail foodservice industry remains challenged to get people out of their homes to eat, as opposed to eating in home. Four out of five meals are prepared and consumed at home, and in-home meals have been on the rise for several years, reports NPD's ongoing food consumption market research. Consider the recent rise of the slow cooker for making convenient meals at home. In 1985, just 9 percent of US households used a slow cooker in a typical two-week period. That figure is now about 18 percent, or twice as many as 30 years ago, according to NPD. Consumers' dual interest in freshly prepared foods and convenience is a key reason for the increasing use of slow cookers. NPD forecasts that the consumption of fresh meals and snacks in addition to convenient food preparation will 40 * SEPT + OCT 2015 * instore continue to grow over the next several years and along with that will be the increasing use of slow cookers. How can retail foodservice battle back? For one, operators can look to the power of the hot foods grab-and-go case, where consumers eagerly buy meals and snacks to go for themselves and their families. Instore and c-store operators must place an even greater emphasis on the value and quality of their hot foods and merchandise these products in such a way that both add convenience and present the quality perception of premium food products.
