editor's note ALLERGENS A new way to connect Success in the retail world can always, in one way or another, be traced back to establishing a strong connection with the consumer. It doesn't matter what you're selling, if a potential customer feels comfortable with your store or brand, they're going to be much quicker to exchange hard-earned money for your product. For those in the retail foodservice industry, there's a new way to build that relationship, and it has everything to do with allergens. In this month's cover feature, Stephanie DeCamp turns to statistics and advice from industry leaders like Phil Lempert to tell the story of allergen awareness and its role in keeping consumers happy and safe. Nearly 40 percent of respondents to an IDDBA study said that they, or someone within their household, had been diagnosed with a food allergy. According to the Centers for Disease Control, five percent of your customers have some sort of foodborne allergy, and that number is predicted to double every 10 years for the foreseeable future. While supermarkets and other retailers are beginning to pay closer attention to these shoppers, an alarmingly low number make it known that they are going out of their way to keep the shoppers safe. Simply put, as with most situations in life and in business, a little communication can go a long way. Inside Commissary Insider, we continue the focus on allergens, exploring the ways and getting insight from Joe Stout on how commissaries and central kitchens can deal with the challenges of allergens and allergen-free production. It's a new world out there when it comes to food allergies. Being on top of the best tactics and procedures can help your business in more ways than one.
