back and be a little more strategic about
the decisions we make and focus on what
it means for the brand and the company
overall," Elyse says.
It has led to a blazing start toward the
company's goal of hitting as many retail
channels as possible and, perhaps a bit
more grandiose, re-shaping the nation's
perception of a classic baked good.
"We have always had a vision for changing the way America looks at the bagel,"
Elyse says. "We knew we wanted to ultimately be in retail and be in every channel we could get into. We took opportunities in front of us and figured out how
to get it done when more opportunities
came to us."

What is a Bantam Bagel?
Nick Olesak describes Bantam bagels as being - at their core - simple,
authentic and unique.
It's an accurate description. Bantam Bagels - each about 100 calories
- feature a New York-style bagel shell with a number of different
fillings. The three varieties headed to Starbucks nationwide include the
Classic (plain bagel with whipped cream cheese), Everybody's Favorite
(everything bagel with veggie cream cheese) and French Toast (cinnamon
nutmeg egg bagel with butter cream cheese).
"What's really exciting about it is, in being a little retail shop in New York
City for the last three years, we've been able to create about 30 flavors,"
Nick says. "While we're launching three with Starbucks and six in grocery,
we have a lot of other flavors behind them that we can tap into."
