The International Food Information Council's
annual Food and Health Survey suggests that by
the end of 2022, Americans will have broadened
their understanding of sustainability. It will play
a pivotal role in their attitudes, behaviors and
shopping habits.
The survey found that 42% of consumers
believe their food choices have a moderate
or significant impact on the environment,
while seven in 10 say climate change
sometimes influences their purchase
decisions. Environmental sustainability as a
consumer value will fuel new eating patterns like
reducetarian, climatarian and low carbon.
Consumers' support for sustainability will
extend beyond the physical environment
and into social issues as well. More than
half of consumers believe it is at least
somewhat important that people working in
food production, retail and foodservice be
treated fairly and equitably. Support for social
sustainability is only expected to grow, as it
has found particular resonance among younger
consumers.
In addition, consumers are proactively looking
for positive food attributes, with messages
about healthy diets resonating, according to
the IFIC survey. They are also yearning for
yesteryear. It's all about nostalgia, and in 2022,
the 1990s have returned. All things simple and
familiar are guiding food choices. At the same
time, consumers have a fever for flavor, as many
remain reluctant to travel or even dine out.
Today's consumers have few things they can
control. One of them is what they buy. They
want choices. They also need to know there's
value in their purchase. While for many price is
very important now, it is also about perception,
what they get in exchange for what they pay.

food products that do not contain unwanted
ingredients and carry all-natural claims, according
to Mintel's Packaged Bread US, March 2021.
Taste, however, remains a critical component
to brand success, as flavor, texture and
freshness outrank clean label in importance.
These consumer priorities challenge bakery
and snack manufacturers to balance a label
that appeals to consumers with a high-quality
sensory experience that delivers the crispiness,
crunchiness or chewiness they expect.
Formulators have a new web-based tool
published by Kemin to assist in these efforts.
The guide helps users learn more about cleanlabel
solutions to ensure that products stay
fresher, longer, and succeed in the dynamic
and competitive marketplace. This may be
accomplished by delaying oxidation with plant
extract blends, extending shelf life by reducing
microbes and mold with mold inhibitors and food
safety ingredients, and maintaining texture and
quality with label-friendly dough conditioners,
enzyme blends and batch packs.
" In the snack and bakery category, products
that are formulated with fewer ingredients but
still offer high nutritional value, such as reduced
fat and increased proteins and fiber content,
continue to grow in popularity, " said Courtney
Schwartz, marketing director at Kemin. " Fats
and oils are key components in many baking
and snack formulations and finding clean-label
solutions to protect product quality and shelf life
is critical to manufacturers. "
