Consumers Just Want to Know

umerous studies show that consumers
are actively trying to minimize food waste.
This is fueled by factors such as financial
concerns, environmental considerations and
mindfulness of world hunger. There is real
interest in purchasing products formulated to
reduce food waste. This includes an evolving
acceptance of ingredient technology, e.g.,
antioxidants, antimicrobials, etc., to assist with
this effort. Transparency and communication
about the role of an ingredient helps gain
consumer trust and acceptance.
Further, consumers are watching their
finances and value is the name of the game.
People are making choices about how they
spend their money. Brands need to engage
shoppers to explain the value products bring to
the table.
" This may be versatile uses, low-stress
flavor building or longer shelf life, yes, longer

shelf life, " says Melanie Bartelme, Global Food
Analyst, Mintel, Chicago. " These attributes can
help show consumers that these products are
'worth' the cost. "

Association, Arlington, Va., says, " It's not
enough for a retailer or manufacturer to follow
sustainability practices. Shoppers want proof. "
This insight comes from FMI Transparency
Trends 2023, a report FMI produced in
collaboration with NielsenIQ. The study showed
that more than three-fourths (76%) of shoppers
find transparency (provide detailed information,
such as what is in the food and how it is made),
to be extremely important (37%) or important
(38%). This figure is up a few points from 72% in
a similar survey two years ago and 69% in 2018.
Shoppers were also asked about their interest
in learning more about products beyond what
