Florapan® Aromatic Yeast and Florapan®
Starter Culture provide bakers with options to
create their own signature to bread products
made by long-fermentation (also called sourdough) baking methods. Traditionally used for
sourdough breads, these ingredients have recently
been extended to deliver new and innovative flavors to various types of bread and bun products.
Sourdough fermentation employs lactic acid
bacteria; the proportion of heterofermentative
(acetic acid producing) to homofermentative
(lactic acid producing) bacteria determines the
flavor of finished baked goods. By selecting the
optimum Florapan® Starter Culture from the line's
continuum of intensive to mild flavors, the baker
can tailor distinct signature products.

ADDING FLAVOR, PERFORMANCE
Bakers seeking convenience in creating
baked goods with variety and unique characteristics can turn to EuroPremix® dry flavor bases.
The line fits formulating needs for both salty

and sweet dough applications, including bread,
rolls, pizza, crackers, croutons and pastries.
EuroPremix® Pesto, for example, combines basil,
parsley and cheese flavors and also adds a natural
green color. Mexican Mole contributes a traditional mole spice mix, sugar and chocolate for a sweet
flavor and dark color. Additional choices in the

Fermaid® inactive dry yeast and Essential®
enzyme-based systems round out Lallemand Baking's
ingredient offerings for bakers. Fermaid® dough
relaxers act as natural dough conditioners to aid
in production and processing of doughs. Typically
used in standardizing flour, reducing mix times and
replacing chemical and harsh/aggressive dough
relaxers. 
The Essential® line is designed for preparation
of clean-label products. These ingredients improve
tolerance, performance and overall baking quality.
