Sodium reduction continues
to be a hot topic. In the
U.S. and throughout the
rest of the world, the
average person consumes
approximately 3,400 mg
of sodium per day. The
American Heart Association
recommends adults
consume no more than
2,300 mg per day with
the goal of moving toward
no more than 1,500 mg
per day. The World Health
Organization recommends
adults consume 2,000 mg
per day.

Concerns of increased
sodium consumption are
often tied to correlations of
higher blood pressure and
other health risks, but as
many of us know, sodium
improves the taste of food.
The chemical element also
enhances dough rheology
in many bakery products.
17 percent of an individual's
daily sodium intake can
come from bread products
and is directly related to
salt's important role in
its production. Sodium
is instrumental in dough

development, increasing
development time,
improving dough tolerance,
reducing dough stickiness
and modifying dough
handling.
