In July 2019, Robert
LaFleur joined Lesaffre as
Technical Services Manager.
In his own words, Robert
describes his role as making
bakery products better
and assisting bakeries to
produce them in the best
way. This includes the
coordination of testing and
optimizing products for
bakers. "Our conduit is our
high-quality ingredients to
provide the appropriate
amount of technology
depending on the
circumstances," he said.
On a typical day, you'll
likely find Robert meeting
with customers at their
facilities. This includes
assisting customers in
the plant, coordinating
testing of Lesaffre's
products or helping
customers optimize one

of their current products.
You might also find him
auditing ovens or freezers
for customers. Although
he's only been with Lesaffre
for a short time, Robert
is already finding ways to
contribute his varied skill
set. This includes the recent
opportunity to assist in the
commercial support run for
the chicken bake product
produced by one of the
company's customers for a
major warehouse supplier.
A career centered around
the bakery is a slightly
different scenario to the
one Robert first imagined
as a child. Growing up on a
farm, he initially dreamed
of being a veterinarian. Yet,
the challenges experienced
on the farm versus those in
a bakery might not seem so
different if you're someone

like Robert who enjoys
approaching new challenges
every single day.
Recently, such a challenge
included working with an
extremely high protein
bread that was very
sensitive. In order to achieve
the desired consistent
product, those involved
deemed the best solution
was to change the protein
source ratios to a more
robust formula. "Bakers
always find their own special
way to put their mark on
their own products. You
can see these different
techniques and processes
at the customer facilities.
I believe you should never
assume that you know the
answer," Robert concludes.
"Always listen first, then
speak."
