Ingredient Week
Dairy Products
Dry dairy product prices were steady
to lower again last week. Butter prices
dropped, but cheese prices were mostly
higher. Contracting for 2008 was slow.
High-heat nonfat dry milk prices were
5@11c a lb lower while low- and mediumheat prices were steady to weaker. Production remained heavy. Domestic and export
demand was light and stocks increased.
Dry whey prices plunged 10c a lb, and
lactose was off 5c. Dry whey and lactose
prices were the only two dairy product
prices below year-ago levels. Demand
for whey was light and supplies were
building. Lactose stocks were excessive.
"Some confectionery operations that
typically contract annually have reduced
their contractual interest to quarterly,"
the U.S. Department of Agriculture said.
Cheese prices were mostly higher as
depleted holiday stocks were replenished. Butter prices dropped as production exceeded demand. November butter
outturn was the heaviest in more than 70
years, the U.S.D.A. said. MBN
Egg Products
Egg and product markets were mixed
last week. Breaking stock eggs prices
plunged 10c a dozen, dried products prices posted strong gains reflecting previous
egg price hikes, and frozen and liquid
product prices were mostly lower.
Prices of dried whole eggs and blends
jumped 15c a lb, while dried whites and
yolks gained 10c. Supplies were generally tight after reduced drying time and
reduced egg supplies during the holidays.
Trading increased following the slow holiday period but still was at most moderate.

Dairy products
were mixed but mostly lower, reflecting
the decline in egg prices.
Traders predicted the sharp drop in egg
prices would be short-lived because of reduced supplies from forced molting after
the first of the year and increased demand

Cocoa
Trading of cocoa powder was slow last
week. A few buyers put on coverage for
all or part of 2009, but neither buyers nor
sellers were pressed to trade that far out.
It was thought most users have the bulk
of 2008 needs covered. Supplies of 10% to
12% butterfat powder were adequate, but
higher-quality powders remained tight.
Ivory Coast exports of cocoa beans
and semi-finished cocoa products in
2006-07 were down 12% from a year earlier, according to official reports. Cocoa
bean arrivals at ports so far in 2007-08
were up about 10% from a year ago, but
exports have been slowed by a strike by
Ivory Coast export registry workers.
German cocoa grind was up 25% from
a year earlier in the fourth quarter and
up 17% from 2006 for the year, indicating
continued strong demand for cocoa. MBN
