Pepperidge cuts sodium by 25%
or more in certain bread
NORWALK, CONN. - Pepperidge
Farm, Inc. has lowered the sodium
content in many of its bread varieties. The action follows a similar move
undertaken by Pepperidge's parent
company, Campbell Soup Co., which
in recent years has cut sodium levels
within its soups line.
Pepperidge said it has reduced the
sodium levels by at least 25% in eight
varieties of its bread offerings by using a natural lower-sodium sea salt.
The varieties affected are:
* 100% Natural 100% Whole Wheat
- 1 slice of bread now contains 130
mg of sodium compared with 180 mg.
* 100% Natural 9 Grain - 1 slice of

bread now contains 130 mg of sodium
compared with 180 mg.
* 100% Natural Honey
Flax - 1 slice of bread now
contains 120 mg of sodium
compared with 170 mg.
* 100% Natural German
Dark Wheat - 1 slice
of bread now contains
150 mg of sodium compared with 210 mg.
* 100% Natural Sprouted
Wheat - 1 slice of bread
now contains 135 mg of sodium compared with 180 mg.
* Stone Ground 100% Whole Wheat
- 1 slice of bread now contains 65 mg

Pepperidge gets Lakeland bakery up and running
LAKELAND, FLA. - Pepperidge
Farm, Inc. officially cut the ribbon
on its $23 million high capacity
bread production line at its Lakeland facility on Sept. 23, according
to The Ledger.
The line, which has been producing bread since mid-June, had been
in the midst of the troubleshooting
period for ironing out any kinks in
the machinery.
According to The Ledger, the line
currently is running at two-thirds
of its capacity but should be running fully by the end of 2009. At
that time, the line will produce 31
million loaves a year. In total, the
add-on at the facility entailed a

20,000-square-foot addition, bringing total square footage to 320,000.
Pepperidge makes Farmhouse,
Natural and Light bread at the facility, with distribution primarily to
the Florida market. In addition to
the new high capacity bread line,
the plant has an existing bread line
that also has annual capacity of 31
million loaves, as well as lines for
the company's Goldfish crackers,
hot dog and hamburger buns.
When Pepperidge first announced
its plans to add a bread line at the
Lakeland facility in October 2007,
the company cited a need to keep
pace with growing demand for its
product in the Southeast. MBN

American Crystal considers cut in sugar beet harvest
MOORHEAD, MINN. - The American Crystal Sugar Co. has told its
growers to delay harvest of part of
their sugar beet acres until mid-October because of higher-than-expected volumes.
David Berg, president of American
Crystal, said the cooperative's board
asked growers to identify up to 10%
of their crop for possible destruction to avoid processing losses in the
spring, according to a newspaper report from the area.
A source at the company told Milling & Baking News that beets were
larger than expected and tonnage
might surpass what local beet processing plants can handle. He noted
that the sugar content was low and
that the high volume yields would

not necessarily result in equally high
beet sugar outturn.
It generally is less costly to destroy
the beets in the field than to harvest
them and not be able to process them,
which results in rotting piles and high
cleanup costs.
The source indicated it was not
unusual for American Crystal to ask
growers to designate a portion of their
crop for possible in-field destruction.
The cooperative projected its growers would harvest 420,000 acres of
sugar beets, about 80,000 acres, or
16%, less than the 500,000 acres harvested last year.

Forks and Crookston, Minn., and in
