Ingredient Week 

 Bakery Flour

Bookings of bakery flour were brisk
last week. Prices declined.
Bakers continued to add to their October-December flour coverage and fill
whatever gaps remained in September
ownership. The pace of business was
not as strong as during the previous
couple of weeks, but volume was significant nonetheless with one major milling
company indicating bookings of nearly
1 million cwts on both Monday and
Tuesday. Some of this business was the
product of bakers covering the futures
component of flour bookings where they
already had positions in basis and/or
millfeed. Bakers also were active in covering futures as a component in prospective flour bookings for January-March
and even April-May.
Estimates of pan bread flour coverage
for October-December ranged from 40%
to 50%, and January-March flour coverage
was estimated at about 20% by one miller.
The heaviest business transpired in
pan bread flour milled from hard winter
wheat. Many buyers of spring standard
patent flour held back in anticipation of
harvest pressure on pricing.
Cookie-cracker and specialty bakers
already held flour coverage more extensive than the bread bakers and weren't
very active last week.
Mills ran five to 5½ days in the Southwest and six to 6½ in the Upper Midwest. Grind averaged near six days
in Central states, 5½ in the Northeast
and just under five in the Southeast.

 Family Flour

Sales of national and regional brands
of family flour increased seasonally. Carlot list prices were unchanged.
Shipments began an annual expansion into the key fall baking season. Each
week, more schools open with all public
schools expected to be operating after
Labor Day. The opening of schools typically brings an uptick in home baking as
families adjust from summer schedules.
Manufacturers and their customers
were planning fall trade promotions,
and these might be more aggressive
than during the previous couple of
years when high wheat prices crimped

 Semolina

Bookings of semolina, granulars and
durum flour were limited last week.
Prices declined.
The price of choice milling hard amber
durum in Minneapolis declined 10c, to
$6.90 a bu. The Canadian Wheat Board
offer on milling durum held in store in
Thunder Bay, Ont., was the equivalent of
$7.25 a bu.
Bookings slowed from recent weeks
only because coverage for October-December was so extensive. One durum
miller indicated nearly all his trade was
booked through the end of the year,
and others indicated semolina coverage
for the fourth quarter was at least 75%

completed. There was reluctance to extend coverage beyond December because of the large durum crop in the field
awaiting harvest that should begin in a
couple of weeks. Ideas were the cash durum market might continue to weaken
under the harvest's weight and reward
pasta makers who hold off on covering
the first quarter of 2010.
Durum mill grind remained heavy
amid brisk semolina orders.
Crop progress across the northern
Plains was running about a week or so
behind the average pace. The North Dakota durum harvest was 2% completed
by Aug. 16 compared with 1% a week
earlier and 26% as the recent five-year
average for the date, according to the
U.S. Department of Agriculture. Durum
turning color was 64% compared with
26% a week earlier and 81% as the average. Rated good to excellent was 83% of
the state's crop.
The Montana harvest on Aug. 16 was
2% completed compared with 1% the
week before and 31% as the average for
the date. Turning color was 66% of the
crop compared with 53% a week earlier
and 84% as the average for the date. Rated
good to excellent was 49% of the state's
crop compared with 39% as the five-year
average; rated fair was 36% of the crop. MBN
