Healthy industry revealed by ﬁnal data on 2010 ﬂour
The revised data on ﬂour production presented in the annual 2010 summary just issued by the Bureau of the Census portray an industry even healthier than indicated by the preliminary quarterly ﬁgures. From the viewpoint of ﬂour-based foods, hardly anything is more positive than the revelation that ﬂour domestic disappearance in the past calendar year increased to a new record. By reaching a total of 417,626,000 cwts, disappearance of ﬂour increased by nearly 4 million cwts over the preceding year and exceeded the previous high in 2007 by a narrow margin. True, the upward trend of ﬂour use has slowed from the dynamic pace ruling in the last two decades of the 20th century. But the gain in 2010, which followed two years of decreases, certainly signals a positive momentum. That is also strikingly the case for per capita disappearance of ﬂour, with the ﬁnal estimate at 135 lbs, unchanged from the prior year, instead of the 1-lb decrease previously indicated. Considering that each lb change relates to 3.1 million cwts across the industry, the signiﬁcance of maintaining that measure looms large in understanding the industry’s well-being. Considering that 2010 also saw sharp gains in ingredient and retail prices, it is welcome news that consumption turned upward in such an environment. While sales of many products made with ﬂour as their main ingredients are affected by price gyrations, the industry may be thankful that the 2010 ﬂour output and consumption data point to a welcome level of resilience.
