Dairy Products
Dry dairy product and cheese prices
were mixed while butter prices fell last
week. Milk supplies still were above
expectations in many areas, but general
support came from recent higher
international skim milk prices said to be
related to drought in New Zealand.
High-heat nonfat dry milk values were
down 1@3c a lb while low/medium-heat
N.D.M. prices were unchanged to up 4c.
Production was strong, and demand from
domestic and international interests was
accelerating in some regions.
“There are some indications that the
U.S. as a whole will be clearing several
million pounds of N.D.M. into a recent
international tender. Market participants
feel this recent sale will construct a floor
under N.D.M. prices for the near term,” the
U.S. Department of Agriculture said.
Lactose and dry whey prices were 2c a lb
lower. Dry whey was pressured by heavy
production, mounting inventories and a
lackluster export market, with the Central
region showing a weak tone while prices
were mixed in the West and Northeast.
Prices of 34% whey protein concentrate
and buttermilk powder advanced 3c a
lb. W.P.C. inventories declined and good
export interest was noted.
Prices of cheddar barrels and blocks
traded at the CME Group declined, while
wholesale varieties posted gains of about
4c a lb. CME Group butter prices declined
for the first time in four weeks as churning

Egg Products
Egg product prices were steady to higher
last week with egg whites continuing to see
strong demand for whites-only breakfast

Ingredient Week

Dairy products
offerings at fast-food restaurants. Trading
was exceptionally quiet as the three-day
Easter weekend approached. Breaking egg
prices were mostly steady but exhibited
some weakness late in the week. Shell egg
supplies were light to moderate.
Dried egg product prices were
unchanged except in the case of whites,
which soared 20c a lb. Liquid whites
jumped 4c a lb, and frozen whites gained
1c. Liquid whole eggs were 2c a lb higher,
and frozen whole eggs were up 1c. Liquid
and frozen yolk prices were unchanged. MBN

Cocoa
Cocoa powder prices continued
to decline amid ample supplies as
processors sought to sell output for the
second half of 2013 and the first half of
2014.
Cocoa futures prices firmed slightly
during the holiday-shortened trading
week but remained in a narrow
$60-a-tonne range near $2,200 a tonne in
nearby through 2014 contracts.
Despite continuing popularity of
chocolate and improving economies
in parts of the world, supplies of cocoa
beans continued to be ample. MBN
