Ingredient Week 

Bakery Flour
Bookings of bakery flour were limited
last week. Price changes were mixed
with a spike in spring standard patent
pricing standing out.
Spring grade prices were raised in response to a spike in cash spring wheat premiums and stronger Minneapolis wheat
futures, which offset the effect of sharply
higher millfeed values in the Upper Midwest. Pricing changes in pan bread flour
and soft flour were minor in comparison.
A softening in the historically strong
cash hard red winter wheat basis and advancing millfeed values encouraged pan
bread bakers to extend coverage of these
components. The activity in components
allowed bakers who already took positions in wheat futures to pull together
contracts and add to their flour ownership in the fourth quarter.
Cookie-cracker and specialty bakers also were active. In instances, fairly
large bookings were required to fill gaps
in September coverage. Soft flour users
booked supply when necessary but held
back from making significant contract
extensions into the fourth quarter in the
hope mill cash bids on soft red winter
wheat might weaken. Millers pointed
out no significant relief was likely, particularly in the eastern Corn Belt, East
and Southeast, where the subpar quality
of much of the wheat harvested there required mills in those regions to reach out
to the west for quality supply.

by a surge in Minneapolis wheat futures

at the week’s outset and then by a spike
in the cash wheat basis, which prodded millers to raise spring grade prices
sharply. Buyers held back in the hope that
strong harvest progress over the Labor
Day weekend would pressure the basis.
Mills in most regions ran full out
ahead of the Labor Day weekend. The
exception was the Northeast, where
grind averaged about five days. MBN

Family Flour
Sales of national and regional brands
of family flour continued to expand seasonally. Indications were a price adjustment, a decline, soon may be offered on
some regional price lists. Carlot list prices have held steady for several months.
Meanwhile, wheat prices, even with a
strong cash basis, were appreciably lower than a year ago.
Order shipment continued to intensify
with grocers preparing for the fall baking season. Orders as expected increased
with the opening of schools across the
nation.
In the market for private label flour,
more buyers filled gaps in their flour
ownership through the end of the year. MBN

Semolina
Bookings of semolina, granulars and
durum flour were steady, and OctoberDecember coverage was approaching
85%. Prices were lowered.

$9.20 a bu. The lower durum price reflected adequate supply of old crop and
progress in the new crop harvest.
Semolina pricing also took into consideration an advance in millfeed values
in the Upper Midwest.
Pasta manufacturers filled gaps in
November-December coverage. Interest
in January-March coverage remained absent. Buyers increasingly were confident
of good quality in durum being harvested and seemed to anticipate further price
weakness in the weeks ahead.
The U.S. Department of Agriculture
field office in North Dakota indicated that
state’s durum harvest was 12% completed by Aug. 25 compared with 78% a year
ago and 34% as the five-year average for
the date. Durum wheat that was ripe was
41%. Durum turning color was 90% compared with 100% last year and 88% as the
average for the date. Condition was rated
76% good to excellent, 23% fair and only
1% poor. Montana durum was 10% harvested compared with 82% last year and
34% as the average for the date. The crop
was rated 38% good to excellent, 37% fair
and 25% poor to very poor.
Durum millers were very pleased
with the quality of durum harvested to
