Bakery Flour
Bookings of bakery flour were limited last week. Prices were little changed
from the previous week.
Most bakers were comfortable with
coverage extending through the first quarter of 2019 and into the second quarter.
Activity since the first of the year has been
subdued, but millers pointed to increased
inquiry, particularly with regard to possible forward basis levels and millfeed
quotes. It was thought the inquiry soon
may translate into additional flour coverage, particularly for April-June.
Wheat futures were on the rise from
recent lows, which did little to encourage a more aggressive stance toward
booking flour among bakers. Futures
were trading at their highest levels since
mid-December.
Cash hard red winter wheat premiums weakened last week. They remained well below year-ago levels. The
spread between quotes on 14%-protein
and 11%-protein wheat was only 10c
a bu. In contrast, a year earlier, when
average protein in the hard red winter
wheat crop was much lower, the spread
between the top and bottom ends of the
protein scale was more than $1.50 a bu.
In contrast, the cash hard red spring
wheat basis was not that much different
from a year ago. It was noted high-protein hard red winter wheat was trading
at about the same level as spring wheat
of similar protein, which suggested some
bakers for certain applications may consider using flour blends with increased

Family Flour
Sales of national and regional brands
of family flour were sluggish. Carlot list
prices were unchanged.
Orders and shipments were routine
with home bakers not expected to provide much of a boost to sales until the
weeks before Easter. Manufacturers
pointed out the traditional bump for
family flour sales was nowhere near as
pronounced as it was in former years but
nevertheless was welcome.

Mill bids on soft red winter wheat remained firm.
Users of all grades of flour earlier covered all or nearly all their needs through
March. One miller indicated April-June
coverage was about 50% for both pan
bread flour and spring grades. Soft flour
users have covered about 65% of their
flour needs in April-June. Looking to the
third quarter, pan bread flour coverage
was estimated at about 10%, soft flour at
about 10% and spring grades at about 5%.
Deeper April-June coverage for soft
flour than for flours milled from hard
wheats may reflect concerns over an expected decrease in plantings for soft red
winter wheat compared with a year ago,
one miller suggested.
Distributors, mostly in the Northeast,
booked what supply was required to keep
contract balances extended two weeks.
Mill grind mostly ranged between five

Semolina
Bookings of semolina, granulars and
durum flour were limited last week.
Price adjustments were minor.
The primary constraint on new business in semolina was the well-covered
status of most pasta manufacturers. Pasta
manufacturers earlier covered their needs
through the first quarter of 2019. AprilJune coverage was estimated at 85%, and
third-quarter coverage was about 75%.
Prices have been mostly stable for
several weeks. Carrying charges weren't
so wide as to discourage forward contracting. It was expected in the next few
weeks, second-quarter coverage may be
nearly completed, and third-quarter coverage may exceed 80%. Coverage for the
date was historically extensive.
The price of choice milling hard amber durum as quoted for the Chicago
rail gateway for delivery beyond was
a nominal $7.35 a bu. The Minneapolis
price was pegged at a nominal $7.05. MBN
