Bakery Flour
Business in bakery flour was slow last
week. Prices were raised.
Kansas City and Chicago wheat futures set new contract lows on Monday
but then rallied from those lows in subsequent trading. Minneapolis futures
advanced from recent lows also set on
Monday. Wheat futures were mostly followers of soybean and especially corn
futures. The latter were catapulted higher
in response to slow progress in spring
planting and expectations that because of
those delays corn may lose acres to soybeans, which may be planted later.
Some bakers took advantage of the
Monday slump in wheat futures to add
coverage of the futures component of flour
contracts for the first quarter of 2020 and
even through May of that year. Individual
spring grade users flat booked flour for the
fourth quarter and even January-March
2020 as they found flour pricing well
within their budgets. As wheat futures
bounced, bakers held back on further coverage to await market developments.
Pan bread bakers were balking at covering the cash wheat basis component
of flour contracts into the new crop year
until hard red winter wheat crop size
and protein prospects become more certain. Cookie-cracker and specialty bakers expressed concern about a small soft
red winter wheat crop that in some areas
may have subpar quality.
Distributors, particularly in the Northeast, weren't very active last week, buying
only what supply was required to keep

Family Flour
Sales of national and regional brands
of family flour were routine. Carlot list
prices were unchanged.
A sluggish tone was expected to prevail until an expected seasonal bump in
sales takes place just ahead of the start to
the 2019-20 school year.
Manufacturers already were pondering product promotion initiatives for the
fall baking season.
In the market for private label flour,
club stores and other mass merchandisers
as well as grocery chains earlier covered
their flour needs through July. Thirdquarter coverage was estimated at about
50% and fourth-quarter coverage at about
30%. Some private label flour buyers held
even more extensive coverage. MBN

the extensive coverage already taken by
pasta manufacturers. One miller indicated the only business for the third quarter yet to be done comprised truck and
fill-in sales. All major pasta makers have
covered their semolina needs through
September. October-December coverage
was estimated at about 75%. Coverage
into 2020 was light as buyers awaited
new crop developments.
The price of choice milling hard amber durum as quoted at the Chicago rail
gateway for delivery beyond remained
a nominal $7.20 a bu. The Minneapolis
price was a nominal $6.90 a bu.
Mills maintained a grind that was seasonally declining by taking delivery of
durum shipped against contracts.
The U.S. Department of Agriculture
indicated the North Dakota durum crop
was 25% planted by May 12 compared
with 24% a year ago and 35% as the recent five-year average for the date. The
Montana durum crop was 33% planted
by May 12 compared with 18% a week
earlier, 35% a year ago and 52% as the
average for the date. Fourteen per cent of
the Montana crop had emerged.
The U.S.D.A. also indicated that harvesting of desert durum was under way.
The Arizona crop was 4% harvested by

One miller indicated bakers have covered nearly all their needs through June.
July-September flour coverage was estimated at about 75% in the case of pan
bread flour, 50% for spring grades and
only 25% for soft flour. October-December coverage was estimated at about
50% for pan bread flour, 30% for spring
grades and 15% for soft flour.
Mill grind averaged about five days in
