Bakery Flour

Bookings of bakery flour were limited
last week, although individual spring
grade buyers covered spring wheat basis
through the end of the year and even into
January-March 2020. Prices were raised
with the widest advances indicated in
soft flour and spring standard patent.
Many millers and bakers attended
the annual Sosland Purchasing Seminar
in Chicago June 9-11. It seemed most
buyers were taking time to consider the
seminar discussion before committing to
further significant contract extensions.
A few bakers who faced depleting backlogs put on additional coverage for July.
Inquiry was limited following the
seminar except in the case of the specialty bread and other spring grade
users who decided to lock in the basis
component of flour contracts even into
the first quarter of 2020. They reasoned
that given the likelihood of a low-protein
hard red winter wheat crop, many bakers requiring minimum protein levels in
their flour may have to employ blends
incorporating flour milled from spring
wheat, which was likely to support the
spring wheat basis going forward.
The cash hard red winter wheat basis weakened but remained well above
year-ago levels. The cash spring wheat
basis was near year-ago levels, which
encouraged the basis activity seen last
week. Mill bids on soft red winter wheat
were firm amid concerns about quality
of the crop in many areas.

Family Flour

Sales of national and regional brands of
family flour were seasonally sluggish last
week. Carlot list prices were unchanged.
Demand was routine in a season comprising the doldrums for family flour.
No breakout from the doldrums was expected until the approach of the 2019-20
school year and the fall baking season.
Most private label flour buyers, including mass merchandisers, club stores and
grocery chains, have covered their needs
through August or even September. Individual buyers have extended coverage

Bookings of semolina, granulars and
durum flour were limited last week.
Prices were raised.
The price of choice milling hard amber
durum was pegged at a nominal $7.30 a
bu, up 5c from the previous week. The
Minneapolis price was a nominal $7 a
bu. The market's tone was firming as
millers and pasta manufacturers eagerly

Northeast, purchased what flour, mostly
spring grades, was required to keep contract balances extended two or three weeks.
One miller estimated that July-September coverage of pan bread flour was
about 75%. Third-quarter coverage was
about 60% in the case of spring standard
patent and 65% for soft flour. October-December coverage was estimated at about
30% in the case of pan bread flour, 15% for

characterized the durum market as "not
bullish, not bearish, but anxious."
Pasta manufacturers have covered
90% of their prospective July-September
semolina needs, and fourth-quarter coverage was estimated at nearly 80%.
The U.S. Department of Agriculture
on June 11 lowered its forecast for the
Arizona durum crop to 3,978,000 bus,
down 195,000 bus from the May projection and down 46% from 7,420,000 bus
in 2018. Total desert durum production
in 2019 (Arizona and California) was
forecast at 7,968,000 bus compared with
10,555,000 bus in 2018.
The U.S.D.A. indicated the Arizona
durum harvest was 43% completed by
June 9 compared with 32% as the recent
five-year average for the date.
The U.S.D.A. indicated 93% of the
North Dakota durum crop was planted
by June 9. Emergence was 77% compared
with 80% as the five-year average progress. The crop's condition was rated 86%
good to excellent, 13% fair and 1% poor.
The Montana crop was 96% planted.
Emergence was 65% versus 72% as the
average for the date. Montana durum
was rated 53% good to excellent (42% as
the five-year average for the date), 46%
