Ingredient Week

Bakery Flour
Bookings of bakery flour continued
to be brisk last week, but not all mills
shared equally in the business. Prices
were mixed with pan bread flour lower
but other grades slightly higher.
Wheat futures were mostly lower with
Minneapolis futures setting new contract lows and Kansas City futures hovering not far above lows set the previous
week. Chicago wheat futures were trading at the lowest levels since mid-May.
Weak wheat futures took some of the
sting out of taking additional basis coverage. As bakers extended their coverage
of both the futures and basis components
of flour contracts, their flour ownership
in both the fourth quarter of 2019 and the
first quarter of 2020 expanded.
One miller said while bookings were
brisk in all grades, spring standard patent, for his company, led the way followed closely by pan bread flour.
Other millers indicated bookings were
steady but fell short of volumes seen the
previous week, when futures tumbled in
the wake of bearish U.S. Department of
Agriculture production and supply-anddemand reports issued Aug. 12.
One miller estimated October-December coverage at 80% for pan bread flour,
75% for spring grades and 70% for soft
flour. Coverage for the first quarter of
2020 was estimated at 50% in pan bread
flour, 30% to 50% in spring grades and
20% to 30% for soft flour.
Rye flour coverage already was extensive. It was noted there was a drop off in

Family Flour
Sales of national and regional brands
of family flour were limited last week.
Carlot list prices were unchanged.
As public schools were reopening
across the country, there was a minor lift
in demand, but sales weren't expected to
show real verve until the approach of the
fall baking season.
Private label flour buyers, including
mass merchandisers and grocery chains,
have covered most of their requirements
through December, which will carry
them through the baking season. MBN

Semolina
Bookings of semolina, granulars and
durum flour were slight and limited to
fill-in coverage. Prices were unchanged.
The price of choice milling hard amber durum as quoted at the Chicago
rail gateway for delivery beyond was
a nominal $7.10 a bu. The Minneapolis
price was a nominal $6.80 a bu.
Pasta manufacturers earlier booked
their semolina needs through September with fourth-quarter coverage
hovering around 85%. Sluggish pasta
business may carry some fourth-quarter orders over into January-March,
where coverage was around 35%.

across most regions as mills prepared for
downtime around Labor Day. MBN

The U.S.D.A. said the North Dakota
durum crop was 7% harvested by Aug.
18, well behind 31% a year ago. Sixty-six
per cent of the crop was mature, behind
83% a year earlier and compared with
59% as the recent five-year average for
the date. Coloring was 95%. The U.S.D.A
rated the crop 72% good to excellent,
22% fair and 6% poor to very poor.
The U.S.D.A. indicated the Montana
durum crop was 13% harvested by Aug.
18 compared with 32% as the recent
five-year average. Eighty-one per cent
of the crop was turning color compared
with 89% both a year earlier and as the
2014-18 average. The condition of the
crop was 79% good to excellent compared with 71% a week earlier and 49%
a year ago.
Agriculture and Agri-Food Canada
forecast Canadian durum production
in 2019 at 5,100,000 tonnes, up 100,000
tonnes from the July projection but down
645,000 tonnes, or 11%, from 5,745,000
tonnes in 2018. The planted area estimate
and the harvested area forecast were left
unchanged from July at 1,980,000 hectares and 1,940,000 hectares, respectively. The forecast average yield was 2.63
tonnes per hectare, up 0.05 tonnes per
hectare from the July outlook. MBN
