Cookie dough creations
Several new product launches have showcased cookie
dough recently, and flavors are playing starring roles.
General Mills, Inc., Minneapolis, late last year introduced
Pillsbury ready-to-bake Lucky Charms cookie dough that
featured marshmallow bits in the shapes and colors of
the hearts, horseshoes, clovers, blue moons and rainbows
found in Lucky Charms cereal.
Nestle USA, Arlington, Va., part of Nestle S.A., this year
introduced two new varieties, Funfetti and brownie batter,
to its line of edible cookie dough. The other two flavors are
chocolate chip and peanut butter chocolate chip monster.
Cookie dough may be used as flavor in other products
as well.
"Cookie dough is an interesting flavor that pops up every few years," Ms. Hogan said. "More recently, there was
a hot trend in edible cookie dough, with various flavors
therein, that sparked new product launches featuring cookie dough flavor in chocolate candy, yogurt, nutrition bars,
cereals and even vodka."
Baked, spiced and dough notes may be added in to layer the flavor of cookie dough, said Vincent Tursi, master
baker/principal technologist for International Flavors &
Fragrances.
"This makes the flavor less one-dimensional and more
complex," he said. "These flavors tend to offer that salty
sweet experience, which is fun and gives consumers a different taste experience to excite their senses."

such as strawberry, blueberry, banana, coconut and peach,"
Ms. Hogan said.
Manufacturers should consider the ingredients in the cereal when deciding upon flavors.
"You have to find flavors that blend well with the ingredients in the cereal matrix," Ms. Slovis said. "For example,
oat cereal could have a stronger taste, making it more difficult to use a flavor with subtle notes. You would need
something with stronger profiles, maybe spice notes like
cinnamon and clove."
Oats pair well with honey, vanilla and cinnamon while
bran works better with fruit and nut profiles, Ms. Hogan
said. Rice is the least polarizing and works well across a
broad spectrum of flavor profiles, she added.

with the flavors birthday cake cookie dough, cold-brew coffee cookie dough and s'mores cookie dough. The flavors
are suitable for use in dairy, ice cream, baked foods, nutrition and performance products, confections, non-alcoholic

"Cookie dough keeps gaining in popularity, and we keep
seeing new cookie dough products and flavors in the market," Ms. Slovis said.
Eating raw cookie dough remains a popular way for
consumers to enjoy nostalgic treats, and pasteurization
and heating treatment have made safe, edible raw cookie
available to consumers of all ages, according to Comax Flavors. The company cited data from Information Resources,
Inc., a marketing firm based in Chicago, that showed the
cookie category increased 2.6% last year. Technomic, Inc.,
Chicago, reported that cookie dough menu items grew 9%
year-over-year in 2019.
Turning to donuts, Dawn Foods, Jackson, Mich., now offers
a salted caramel donut mix and a birthday cake donut mix.
The company cited Datassential data showing the number of salted caramel items on menus has grown 74% since
2015. The salted caramel donut may be topped with caramel-flavored fudge icing and feature coarse sea salt sprinkles or pretzel salt sprinkles.
Sales of birthday cake flavored items grew 27% between
2017 and 2018, according to Datassential data cited by
Dawn. The birthday cake donut features vanilla flavor and
rainbow sprinkles incorporated into the mix. Toppings on
the donut could include Dawn's Fon Dip white flat icing
and more sprinkles.
Salsa and cheese in bread
Rye, salsa and cheese are among flavors incorporated in
artisan bread.
The Tastalito range from BreadPartners, Inc., Cinnaminson, N.J., features seasonings, herbs, natural flavors, sours
