Bakery Flour
Bookings of bakery flour were limited last
week. Prices advanced.
The most active buyers were distributors
seeking coverage through August and even
into September, and mid-size bakeries adding
some coverage into the fourth quarter.
The early-week surge in wheat futures
kept most bakers on the sidelines. Those
distributors and bakers that did extend coverage
did so only after futures began to turn
lower at midweek.
There was only minimal activity in components.
Strength in futures was off-putting to
most. Cash basis levels were strong, which also
failed to draw interest. Millfeed prices have
been under pressure from ample supplies,
which only served to underpin flour prices.
Most bakers have covered their flour
needs for the current quarter. OctoberDecember
coverage was estimated by one
major milling company at 70% for pan bread
flour, 60% for spring grades and 50% for soft
flour. First-quarter 2022 coverage was estimated
at 30% for pan bread and soft flour and
at about 20% for spring grades.
The US Department of Agriculture in its
quarterly Flour Milling Products report
said all-wheat ground for flour during the
second quarter of 2021 totaled 223 million
bus, down 1% from the first quarter grind of
225 million bus but up from the April-June
2020 grind of 219 million bus.
The USDA said second-quarter flour
production was 103 million cwts, down less

than 1% from the first quarter but up 1% from
April-June 2020. Whole wheat flour production
at 4.87 million cwts during the second
quarter of 2021 accounted for 5% of total
flour production.
Mill grind in July and early August has
been increasing seasonally with some mills
running up to seven days last week.
In what has become a rarity in recent
years, the USDA issued a flour tender for a
donation abroad. The tender was a small one,
500 tonnes, or 11,020 cwts, with offers due
Aug. 17 and shipment for Sept. 16-Oct. 29. MBN
Family Flour
Sales and shipments of national and
regional brands of family flour increased
last week as buyers placed orders for shipments
to arrive before carlot list price hikes
announced by additional manufacturers take
effect at the end of August. Some price hikes
have been in effect since the end of July.
Sales and shipments were expected to
continue to increase seasonally in the next
several weeks as buyers stock warehouses
in advance of the fall baking season.
In the market for private label flour,
most buyers earlier contracted for supply
through September or even December.
No widespread promotions were evident. MBN
Semolina
Bookings of semolina, granulars and
durum flour were light last week. Prices
moved higher in response to lower millfeed
values. The price of choice milling hard
amber durum as quoted at the Chicago rail
gateway for delivery beyond remained a
nominal $14.75 a bu. One miller commented
a Canadian exporter offered durum at more
than $17 a bu but found no buyers.
Most pasta manufacturers earlier covered
all their semolina needs through September,
and October-December coverage was estimated
at 80%. Coverage into 2020 remained light.

The USDA said durum wheat ground for
flour and semolina production during the
second quarter of 2021 totaled 15.3 million
bus, down 11% from 17.2 million bus in the
first quarter and down 21% from 19.4 million
bus in the second quarter of 2020.
Second-quarter durum flour and semolina
production totaled 7.25 million cwts,
down 10% from 8.09 million cwts in the first
quarter and down 21% from 9.16 million cwts
in April-June 2020.
The unfavorable contrast with the 2020
second quarter reflected the return to more
normal demand compared with the surge
in demand for pasta products during the
height of the COVID-19 pandemic.
The USDA rated the condition of the
North Dakota durum crop as of Aug. 1 at
37% good to excellent and 44% poor to very
poor. About three-fourths of the crop was
turning color, and about 20% was mature.
Harvesting was said to be underway ahead
of last weekend. The USDA said the Montana
durum harvest was 5% completed Aug.
1. The Montana crop was in bad shape with
the USDA rating its condition as of Aug. 1
at 55% very poor, 39% poor, 4% fair and 2%
