Bakery Flour
Bookings of bakery flour slowed somewhat
last week from the crisp pace of the
prior three weeks. Prices were mixed
with pan-bread flour lowered, spring and
soft flours raised, sharply in the latter's
case.
Bakers entered the holiday-shortened
week having locked in a considerable volume
of flour during the preceding fortnight.
Some were keen to continue to bolster coverage
levels and did so as prices eased through
mid-week. Activity waned as prices were
raised later in the week. Those increases
took into consideration wheat futures that
began to rally after touching multi-month
lows, which offset a downtrend on the Kansas
City basis.
Consumer demand remained strong,
millers said, and some large bakeries were
baking at full capacity. Manufacturers of
consumer packaged goods along with commercial
providers of baked foods and other
ingredients for foodservice were the most
active buyers.
One miller said just under five days'
worth of flour grind had been sold over the
initial three trading days of the holidayshortened
week. Bakers largely ignored current
quarter coverage for a second straight
week, so estimates were unchanged at 80%
for spring grades, 75% for pan-bread flour
and 55% for soft flour.

coverage jumping to 65%, spring grades to
60% and soft flour to 45%. Coverage in 2023
was little changed at about 15% for all types
of flour in the first quarter and 5% for spring
and pan-bread flours in the April-June
period.
A miller noted conversations with a transportation
contractor indicated the demand
for trucking capacity had eased slightly. MBN

Sales and shipments of national and
regional brands of family flour remained
sluggish overall last week. Carlot list prices
were unchanged.
Shippers expected demand to climb from
the summer doldrums in late August and
early September at the onset of the 2022-23
school year. Many manufacturers with
warehousing capacity were building inventory
for that purpose and for the fall baking
season, including some larger bag sizes
intended for foodservice.
While branded flour sales were sluggish,
one miller noted private label customers
had locked in flour needs through September
and, in some cases, up to a full calendar
year.
" That buyer has too many other SKUs to
purchase for his stores and doesn't want to
negotiate flour every month or every other
month, " a miller said. Others " already had
futures covered and wanted to fully book to
avoid any supply disruption. "

averaged five days of run time. Prices were
lowered in consideration of weaker durum
wheat prices.
Millers said pasta manufacturers were
comfortable with their positions at about
90% covered in the current quarter and were
waiting to see how low prices might go as
durum values wane.
The price of choice milling hard amber
durum as quoted at the Chicago rail gateway
for delivery beyond was $15 per bu,
down 75¢ from a week earlier and down
$1.25 from May. Little to no durum changed
hands. Prices were under pressure from an
enduring stream of recent bearish news,
such as an improved outlook for the 2022
crop from timely summer rains in durum
areas and from the USDA's forecast of 2022
durum planted area at 1.976 million acres,
up 3.1% from the March Prospective Plantings
forecast and a 21% jump from 2021.
Also, durum prices were under spillover
pressure from recent sharp selloffs in Kansas
City and Minneapolis wheat futures.
Millers eyeing pipelines already in
place for semolina coverage on the books
surmised little demand remained for
old-crop supplies, and what remained in
storage might be sold as new crop going
